View Full Version : avocados, going bad, help me save them!

I have 3 avos that I'm afraid are going bad in the refrigerator. I usually eat mine either in a mousse type recipe, or chopped with tomatoes and onion and have guacamole....but alas, I have NO carob, and no tomatoes and grocery store day is a few days away. HOW can I store them to preserve them or is there a "recipe" that will last for awhile (or I can freeze?) I sure hate to see them go to waste.

YES, let me try a salad dressing, and a key lime pie sounds geat...not sure about the sweetner...raisins is about all i've got. Maybe I can squeeze a grocery trip in tomorrow....you know, for the sake of the avos!!

you can chop them up and throw some in a salad, and use some in the dressing.
do you have kids? they like avo's? sometimes I just cut some avo up and sprinkle with sea salt and my kids gobble this up. I usually serve this with some other cut up veggies for them and they love it. I also make some avocado sandwhiches for them (they are not 100% raw).

if you want to make a key lime type pudding mix with some agave or soaked dates (raisons might work? never tried it) or raw honey. Lime juice, vanilla
and coconut butter (optional) if you have it. You can eat as is or put in some type of nut crust if you like.

Punky, do you have a recipe for that pie, or do you just eyeball it? Sounds good and simple. I've already decided to go tomorrow to buy dates and other foods that I HAVE TO HAVE at the HFS! I just need to prepare these avos so they don't go bad, and a good pie would be great! I may make a chocolate mousse and freeze it (have you tried that, it is REALLY good) I think I got the recipe from this sight, (check the banana) and then froze the mousse for a GREAT frozen chocolate ice cream!
I guess I've answered my own questions!

I will email the recipe in a bit. Make sure to refrigerate the avo's till you can use them to keep them from going bad as quickly.

You can peel them, take the pit out, mash them and freeze them to use later!
They freeze fine. I just learned that here!

do you have a dog? my dog LOVES avos!

you can also mash them up with some greens, lemon and celtic salt for a yummy salad.

good tip Rowan! I did not know that you could freeze them! that would save me some avocados! thanks!

Ok, Wendi, I emailed you the pie recipe.
I just realized that Alissa has a key lime recipe too on page 521,
if you have her book. The one I sent is from Jennifer Cornbleet's book.
You can compare and improvise with what you have on hand
I think I have too many uncookbooks...I have another key lime tart recipe
in "Raw Food Real World"..

You have probably done something with them already ? but just in case thought I would add that avocado chutney keeps several days in the fridge and doubling the recipe is easy.
Avocado chutney is a staple in my house, if you have not tried your really missing something !

I do the banana and advocado in the blender. My two year old son thinks that it is icecream. He ate half of the container at one sitting.

PUNKY, I'm sorry, I didn't get the email....I kept waiting...but it's ok...I've got Alissa's book. thanks everyone for the tips. I froze my avos...I bet they'll make a great ice cream, or thaw to use for something else. Thanks again.

Here is the recipe for key lime pie..I have several in different books, but
this one looks the simplist. I have never made it myself, but have eaten it at the raw local restaurant and love it. If you want to keep it simple just make the mousse or go all out and make the tart/pie. Let me know how you like it if you decide to make it.

Key Lime Mousse:
(Raw Food Made Easy for 1 or 2 People, by Jennifer Cornbleet)
Page 159

Yield: 1 c. 2 servings

3/4 cup chopped avocados (1 1/4avocados)
1/4 c. raw honey or agave nectar
2 tbsp. fresh lime juice
sliced fresh kiwifruit and/or berries for garnish (optional)

Place the avocados, honey, and lime juice in a food processor fitted with the S
blade and process until smooth. Stop occasionally to scrape down the sides
of the bowl with a rubber spatula. Garnish with kiwifruit slices and/or berries
if desired. Serve immediately.

Key Lime Tart: p. 150
Yield: 1 9" pie or tart

3 cups Coconut Crust (page 145, recipe follows)
2 cups Key Lime Mousse (p. 159) DOUBLE RECIPE ABOVE
3 kiwifruit, peeled (opt)
2 c. fresh raspberries (opt)
1c. fresh blueberries (opt)

Scoop the crust into a pie or tart pan. Use a light circular motion with your palm
and fingers to distribute the crumbs uniformly along the bottom and up the sides
of the pan. There should be a 3/4 inch lip of crumbs along the sides.
After the crumbs are evenly distributed, press the crust down on the bottom of the pan using your fingers and palm. Be sure to press especially firmly where the bottom of the pan joins the sides. Then press the crust against the pan's sides, shaping it so that the edges are flush with the rim. Place the crust in the freezer for 15 min.

Remove the crust from the freezer and spread the Key Lime Mousse over the bottom. Cut the kiwi in half lengthwise, then slice them into half-moons. Arrange
the slices around the outer edge of the tart, propping them at an angle against the crust. Place the raspberries in front of the kiwi slices, creating two or more rings. Mound the blueberries in the center of the tart. Chill for at least 2 hours
before serving. Serve chilled or at room temperature.
Covered with plastic wrap in the frig, Key Lime Tart will keep for 3 days.

Coconut Crust:

Yield: 3 cups, for one 9 inch pie or tart crust

1 1/2 cups unsweetened shredded dried coconut
3/4 c macadamia nuts, unsoaked
3/4 c. walnuts, unsoaked (or an additional 3/4 c. mac nuts)
1/2 tsp. salt
1/2 c. pitted medjool dates, unsoaked

Place the coconut, mac nuts, walnuts and salt in a food processer fitted
with the S blade and process until coasely ground. Add the dates and process
until the mixture resembles coarse crumbs and begins to stick together. Don't overprocess. Stored in a sealed container, Coconut Crust will keep for one month in the frig or 3 months in the freezer.
