Has anyone come up with a substitue for scrambled eggs or an omelette?

Still looking for something that I could make that would be in the style of an omelette that could be filled with chopped veggies.
No I don't eat eggs but they were quick to fix and maybe something can me made that's raw.

i would dehydrate a crepe type thing, and fill it with marinated veggies and/or nut cheese. make it yellow! you will feel like it is eggs.

Alissa's enchiladas would work great for this, because they are exactly what you are asking for, they are a corn tortilla thingy, and filled with veggies.
