How do I know when my rejuvalac has fermented enough? What is it supposed to taste like? I've been soaking my wheat sprouts for approx. 48hrs now. It tastes a little tangy/lemony but still very watery (if you classify water as a flavor..lol).

Sorry guys! False alarm, I did a search and judging by the general consensus of most websites I have made perfect batch of rejuvalac!
However this leads me to another question...
Most websites say to discard the sprouts after your 2nd or 3rd batch, but this site says you can still eat them: http://www.hishealingways.com/rejuvelac/makerejuvelac.html
Can you? Has anyone? Would you want to? (I bet they'd taste pretty sour!)

That is a great link. I have not incorporated rejuvelac in my diet but it is the next project on the list.
I suggest that as a compromise you make only one batch and then use the grains for something else. You will have the best of both worlds. You will have the fresh strong drink all of the time and you will not be wasting the grains that you have put so much of your time and energy into.
