Do you think Mac nuts will be a good substitute for cashews in cashew nut cream?

it depends on what you are using them for,
usually you can sub pine nuts, macs and cashews, but the cashews after soaking make a really smooth cream, they just smush right up
pine nuts and macs will too, but not as much, also you don't soak pine nuts or mac nuts.
I'd say try it if you have an inexpensive source, as they are indeed about 5 times the price of cashews.

I was looking for some sort of sour cream substitute. I was thinking I could use cashew cream, but I was out of cashews, but had mac nuts.
It all worked out though, I found a sour cream recipe in Gabriel Cousens Rainbow Green Live Food Cuisine book that called for mac nuts and sunflower seeds. I had both.
It was yummy.

YEP, I eat mac nuts all the time, and in Alissa's book she has an excellent cashew sour cream recipe that I make to go with her enchiladas and I make salsa too, also great as a dip the cashew sour cream,mmmmmmmmmmm
