I have been buying beets lately for juicing, but the greens are edible too aren't they? If they are, does anyone have any suggestions on how to prepare/eat them--would they be just like regular salad greens or what?

Hi Myssi. Beet greens are great! They are so nutritious. I used to grow organic salad mix to sell at the Farmers Market and always put beet greens in it. You can use them in salad or toss them in smoothies, juice them....anything you would do with lettuce type greens.

BEET GREENS IN SMOOTHIES! GREAT FUN! COLOR IS LIKE JELLO CHOCO PUDDING!
You can tell I love these things, right?
They are terrific in smoothies if you don't mind the color! Small leaves in salads are a real treat. You can juice the stems if you don't like just eating them.
All around wonderful plant, one of my top 3 favorites!
PS the beets aren't bad, either!
