When hubby eats more than 2 or three bites of walnuts his tongue starts to burn. could this be an allergy or something else.
He never tried them before so I have not comparison. Other than he says if he eats a lot of dry salted pistachios he got the same thing.
any ideas anyone

I have experienced the same with some walnuts but not bad enough to question it. I did however notice that it appears to be a problem when the nut has not been soaked. (This must be rinsing more than the tannin off.
Are you soaking? I know not all recipes ask for them to be but he may need this.)
I searched on the net and found this article for you on oral allergies.

Hope soaking helps for him. Walnuts are far too delicious to have to pass on.

Could be an allergy, although I sometimes get this and am not allergic. Am currently eating walnuts and this is not happening. I am prone to canker sores. And in reading about them, I discovered that one should not eat foods with a rough texture when they have cropped up because this would irritate them. I used to think that walnuts were causing canker sores. But now I'm thinking that perhaps I had the misfortune of eating walnuts just as the canker sores were staring to appear.
Your husband might want to get an allergy test done for foods. This can be done by a simple blood test. Life threatening allergies are nothing to fool with. And this way he would know for sure.
