well, I had to soak the almonds overnight. So, that's like 12 hours right there! lol, but seriously now...
I think I started making it around noon. I had to soak cashews and dates for an hour for the frosting, so I put them in water while I made the rest of the cake. It took about a half hour to make the layers, and I wrapped them in saran wrap and put them in the fridge to firm up. then the frosting took a lot longer than expected. We got it realllly creamy! mmm! Then I tried putting the frosting between two layers and it wasn't firm enough, so I put the frosting(still in the blender, lol) in the fridge, and the cake layers in the freezer. After a couple hours the frosting was firmer, and so I frosted and layered up the cake and then the cake started tipping over!!(think the cake from disney's Sleeping Beauty! lol!) and then we decorated it and put it back in the freezer. So, it took a few hours...it's definitely not a cake you can just throw together :) I think next time I'll wait till the frosting is firmer before assembling the cake :D

For my birthday last year, we had raw carrot cake (MMM!!) because I love carrot cake. This year....maybe Strawberry Almond Cake?? :D

There is also a cake recipe in Alissa's book that I want to try.. "Black Forest" it sounds really good.
PS Will your brother eat some of the cake that you made?

The cake was really good!! It wasn't as cake-y as the cake we had at Cafe Gratitude, but it was still delicious! It was very heavy because of the four layers, I think next time I make a cake it will be two layers with bigger frosting layers. And I will wait for the frosting to firm up :D
PS Will your brother eat some of the cake that you made?
Maybe! I'm afraid that it might melt and get all gooshy by the time it gets to him, though. I'm definitely going to let my parents try it, they're only about 5 minutes away from where we live.

samadhisoul, hehe! It was really good! My SAD parents liked it :) It was a bit heavy, but still really good. Nice and sweet :D It sliced pretty well, with the first slice, the knife stuck to the cake a little bit, but after that it was a sinch. The texture was similar to ice cream-cake! That's what my mom said it reminded her of.

I didn't follow the recipe exactly. I made four layers of cake instead of two. And where the recipe called for raisins, I used currants. But that's about it. :)
