I saw on the food network today in one of the 30 minute segments.. She used the big bulb at the bottom of a fennel plant.. sliced thin to eat with cheeze.. some pretty strong cheeses..I have only eaten the fresh fennel soft feathery tops... as a kid.. growing up in an Italian family...

Does anyone have recipes for a large amount of fennel like that? I do not see it mentioned much... :confused:

I ususallyt chop it up with celery and apple in FP and eat it like chutney tetuxure soup :)

Hello,

Fennel (bulb) is good raw for salads, get a copy of Alissa's book "Living on Live Foods"

Also you can use the bulb along with onions and leeks either diced or finely chopped or whatever to season your food.

Ok gonna have to try this.. leeks too never had them... up until recently I really have stayed away from greens... lol...but body loves them now just don't know them all yet..

i made the fennel salad from Alissas book, very nice. it was the first time i ever had fennel too.

you can also use the fennel bulb in a salad with watercress in a simple dressing of olive oil and lemon juice.

make a sicilian olive salad--green cracked olives, chopped celery, olive oil, ACV, oregano, crushed red pepper, and add the chopped fennel along with the celery. I grew up italian too.:D

I love it so much I put it most of my salads.

I am a fennel fan and Sicilian/Italian too!! I use it all the time in my salad chopped with some greens, baby carrots, maybe red peppers and avocado dressing and lemon.

BONUS --it is a digestive aid too!!

Great! Yes, I am from Sicilian background also. Your salad sounds wonderful. Hubby loves both Italian and Mexican foods with Chinese in third place.. So I have looked for alot of these sort of meals..raw.. italian is pretty easy with all the tomatoe recipes.. Mexican I have not tried yet and wonder if he would go for it.. looking for Chinese counter part also...

Digestive area is the hard part for him as everytime he eats "right" he gets upset stomach and can't sleep and is gassy etc.. doesn't matter how it is combined... sooooo this is frustrating to me.. because as he gets this way after eating good it makes him want to not eat right so he won't "feel this way". If we could just get past the tummy problems I probably could get him to eat raw all the time... I will keep trying.. he won't do fasts or anything like that...
