I just made to most yummy raw vegan version of chocolate chocolate chip ice cream.
I did use cocoa powder insted of carob or cacao. ( I wanted to use it up and get it out of the house.)
I am telling you, if you make this, you will not be missing ice cream anymore. It was so authentic and dairy like.
I got the idea from a recipe in Vice Cream by Jeff Rogers. I took his vegan idea and made it raw vegan and added chocolate chips. (He has raw and vegan ice cream recipes in it.)
My version:
1 cup of raw cashew pieces.
3/4 cup of raw macadamia nuts
1 3/4 cup of purified water
1/2-3/4th cup of agave (I made it with 3/4 cup and thought it was a little too sweet, but you might like it.)
2 teaspoons of alcohol free vanilla flavor
1/4 teaspoon of alcohol free almond flavor
1/2 cup of carob or cacao powder
Chocolate chips:
1/4 cup of carob or cacao powder
1/8 cup of coconut oil
agave to taste
I start out by mixing chocolate chip ingredients. Then I spread it on a plate and freeze.
Mix cashews, macadamias, purifed water, vanilla and almond in the Vita Mix till silky smooth. (I prefer the vita mix over food processor because it seems to blend it alot better and it gives it a creamy vibe that I did not get in the food processor.) Add agave and carob or cacao powder. Chill blender in freezer for 40 minutes to a hour.
Pour Mixture in ice cream maker and chill.
Take chocolate chip mixture out of freezer and chop up. (I used one of those hatchet things that you use to open up a baby thai coconut.)
When the Nut Cream is almost done add chocolate chips. I reccomend waiting to add the chocolate chips in the end because if you put it in the beginning like I did it they melt a little and it is just too rich.
If you want to make mint chocolate chip add 2 teaspoons of alcohol free peppermint flavor to the blended part. (or mint leaves.)
You will not be dissapointed! :cool:
