I just made the Raw house dressing from Juliano's cook book. It has a very sharp ginger taste. My hubby will be home within 30 minutes. Short of throwing it out and running to the store to buy more olive oil to start again. Any ideas???
ingredients
1/4 cup lemon juice
1 1/2 cups olive oil
1/3 cup garlic
2 tbsps ginger
3 tbsp soy sauces
Again any help would be appreciated.

GOSH...I'm not a pro....maybe something with sweetness, and alittle salt???? Maybe someone knows better HOW to take out the "ginger" taste. I hate when I need an answer RIGHT NOW ;) iT'S LIKE..I need the rawfood HOTLINE! Good luck. OH...how about adding alittle more of the OTHER ingredients...and some other oil in place of the olive, like flax?????

Try making the recipe again without the ginger and then mixing the two together-- maybe a little less olive oil as I guess you are low on it... :confused:

I remade the recipe once and ran out of olive oil. ugh

If you have any oranges around maybe you can juice them and throw the juice and dressing in the blender and whirl it around for a bit.
I also have Juliano's book, everything is very overseasoned. Was that really 1/3 CUP of garlic?

Yes really a 1/3 of a cup of garlic.
I agree that is the main reason I went ahead and got Alissa's, hubby is very upset food is sometimes unedible even when we cut the seasoning in half.
How much orange juice or oranges do you think? I probably have 2 1/2 cups of dressing

Alissa's book is the best I've read. I OWN 3 books and have checked out 3 from the library and hers is my "raw food bible" :D About the orange juice...I would juice the oranges....the add alittle at a time and TASTE before you add more! That way it will turn out to YOUR liking! Just my opinion, and not worth too awful much! ;)

You could start with the juice of 1 and blend, taste and work your way up. I like using OJ itself on greens too, it has that tangy sweet/sour flavor similar to a dressing and it's easy to use. But it would really pair up well with all that garlic and the ginger, so if you used a lot it probably would come out good too.
Juliano's book was my first raw book. I liked the hummus l'orange and the falafels, which were salty too. And the oatmeal cookies. I haven't looked at it in quite a while.

It took 2 oranges to cut the heavy ginger flavor and make it edible. Now I have soup. hehehehe
Oh well, if he doesn't like it I will just admit I bought it at the health food store. So lie through me teeth.
Nah, I will just admit to making it and go buy more stuff.

Well just an ending note dressing thickened overnight and also the ginger taste is overpowering again.
I decided to just throw it out.
Anyone got a nice light dressing option they would share

Sorry no measurements, but you can tweak it to your liking.
In a blender, put some:
Lemon juice
Honey/agave/maple syrup
Sea salt
Pinch of ground ginger
Black pepper (optional)
Whiz it all up, and while the blender is going, drizzle in some cold pressed flaxseed oil. Doing it this way will produce a creamy dressing that won't separate. Be careful not to overprocess, or you'll end up with mayonnaise!
When you've added enough oil to calm down the sweet/tartness of the honey/lemon mix, throw in a handful of cilantro or parsley and pulse it a couple of times in the blender to chop and mix. Don't let it run too long, or the pretty yellow dressing with green flecks will turn into green slime. It will still taste great -- it's just not as pretty.

Thanks for the update. It is hard to believe with all that garlic you weren't tasting that instead of the ginger.
I got inspired from this thread and made a dressing last night with 1 single clove of garlic and that was too strong for my hubby. I'll probably end up tossing mine as well - I used spanish olive oil and the taste of that ruined the dressing for me.
I find fresh orange juice itself so nice and light it's one of the best. You could blend it with avocado or cashews and get a creamier dressing without the heaviness and concentrated fat of oil. Might have to use it up in a day though because it's so fresh.
You could also try lemons, honey or agave and cashews for a lemonade dressing.
Or tomatoes and tahini.
Limes/agave/cilantro.
Even just avocado mashed up by itself or with a little bit of citrus juice.
Often I won't use dressing, but I will toss in some sun dried olives and/or sun dried tomatoes packed in oil and herbs. It is enough to dress that salad perfectly. I've become accustomed to a very lightly dressed salad.
Sometimes if the salad ingredients are cut really small or chopped, almost shredded, the salad is so juicy from the fresh vegetables you don't even need a dressing. You can do a slaw with almost any ingredient, doesn't always have to be cabbage.
