I am leaving for vacation and want to take some frozen entrees with me. I am throwing the veggies in my refrigerator together and this one worked. (I got the basic recipe off another site.) Quite tasty! This soup freezes well.



Red Pepper Cauliflower Soup

1/2 cup raw cashews
1 cup spring water
1/4 red pepper
1 small head cauliflower
handful baby spinach
1 large shallot
Celtic sea salt to taste
cayenne pepper to taste
cracked black pepper to taste

Blend the cashews and water until smooth. Add the red pepper, spinach, shallot, and cauliflower in that order. If needed, add additional spring water. Add spices to taste. Warm in dehydrator.

Very filling!

have you ever found that raw cauliflower is bitter and harsh when you blend it into "mashed potatoes" or soup?

Maybe your recipe has so many other ingredients that it distracts away from the nasty taste i find in raw cauliflower (not just munched on by throwing some little pieces in to a salad, but somehow when its broken down into a sort of liquid ocnsistency)

I really like cauliflower otherwise. if you know the taste i mean, but didn't get if from this soup, let me know.
