View Full Version : Ice cream sandwiches

I was at a fair yesterday, and saw an ice cream sandwich maker, I used to LOVE the SAD ones, so came home and made some raw ones (didn't buy the maker though)
okay,
Equipment needed: food processor
for the Ice cream:
3 frozen bananas (peeled)
1 tsp vanilla extract or 1" vanilla bean (optional)
3 medjool dates (pitted & soaked)
blend in food processor until smooth
place back into freezer, while you are preparing the sandwich part
for the sandwich:
1 cup walnuts (not soaked)
1 cup dates (not soaked but pitted)
1/2 cup cacoa powder or carob (your choice)
1 tsp cinnamon
Blend in food processor until chunky but will hold together,
make 12 balls out of mixture, about the size of large grapes 1" in diameter then flatten on a teflex sheet or on the counter, but make sure they won't stick.
after you have made all of the balls into rounds, place them flat into the freezer until firm (about 15 to 20 minutes)
take out 6 the rounds and the re-frozen ice cream, and spoon some of the ice cream on each one, then take out the other 6 of the rounds from the freezer and top each one, squish it down so it makes a sandwich, then return to the freezer to get hard, once they are hard, place them into a baggie or a plastic container to keep.

I am making Ice Cream Sandwich cookies for my hubby and boys who eat cooked, and these are the ones with real Ice Cream, ect. you know the kind. Then I am going to roll them in chocolate chips.
So.... now I have a recipie for a raw version for myself to eat tonite! Whoo Hooo! happy Dance thanks to RP. I think I willl make the raw chocolate chips to roll these in, do you think that would work?

Well, I didn't have time to make the raw chocolate chips, so I crumbled up a lara bar instead.....yummm! I also quadrupled the recipie, LOL. Guess what? They're all gone.d
Interesting combination of flavors:
vanilla ice cream with crumbled chocolate lara bars.
Carob ice cream with crumbled cashew or choc mint lara bars, yum!
Vanilla ice cream with crumbled Ginger lara bars.
Carob ice cream with crumbled cherry pie lara bar (haven't tried this one).
The lara bars can be crumbled up on top of a bowl of Ice cream, or made into RP's sandwichs then rolled in the crumbs.

You can also use any of Alissa's Cookies for the sandwiches, make cookies in the traditional uncooked way and freeze.
I am going to try it with the Banana Macadamia ones.

YEP, ALL of Alissa's cookies should work perfectly in this, and any ice cream recipes you all have should work great too.
so, if you have a suggestion, like rolling them in Lara Bars, (GREAT IDEA! Crystl-jade) then keep them coming.!

One more suggestion (haven't tried it, though) is to make the neopolitan version of ice cream sandwiches I used to see on the ice cream trucks. Make some plain vanilla-flavored, the "chocolate" and some strawberry ice creams and put a little scoop of each on the cookie, etc.
I'm making ice cream sandwiches tonight...I was just waiting for my bananas to freeze! Can't wait!! :p

Okay...I made these and they are super yummy! Rawpriestess, this recipe RAWKS! :D I didn't leave my sandwich "dough" chunky and I added a little vanilla to the mix. But these are SO good! Thank you again for the recipe
I didn't let them set long enough before I tried to take the picture, so the ice cream was kinda melting a little, but you'll get the idea!

Thank you again Rawpriestess for a fabulous recipe, I just made these this morning and had one for my lunch. WOW is all I can say... delicious! I made strawberry ice cream and mine look just like the photo posted by Rawkinlocs. My hubby is in for a treat when he gets home today, as long as I don't eat them all myself!

prunes and raisins will add sweetener, but will give it a different taste, so if you don't like it, just remember that.
also, you could just use the banana if they are sweet eanough, as you may not want them as sweet as I like them, it's all up to you,

I AM SO GLAD YOU LIKE THEM, we can't keep them in our house, we make them then eat them all up, yummmmyy
like others have suggested, roll them in chocolate raw chips, you could use chopped nuts, raisins, date pieces, any dried fruits, any nuts, coconut, carob, cinnamon, anything you like,
but by all means, have fun and experiment with these guys, and make sure to post your pics and your favorite filling or topping or suggestion too.
I LOVE VARIETY.

I almost always use prunes with carob and chocolate. I like the flavor combo better than dates or raisins. Not as sweet.

I quadroulpled this recipie, and for some reason the ice cream is so soft, it melts right off the cookies while in the freezer! :( I did'nt do anything different this time except quadruple the recipie. The ice cream is like soft serve. There is no way I can make sandwiches with this. NOW, what am I gonna do?
Lunar fey, how did you get the ice cream so thick and to stay in one spot?

Crystl-jade--Well, I didn't really do anything different with the ice cream...I just put a nicely frozen banana into the blender and threw in a prune or two...I wouldn't suggest using a prune with the banana if you're going to be eating the ice cream plain...but it was fine on the little cookie thing. Otherwise I don't know what made it different...except that I had it in the freezer for a long time.

hmmmm... question....
Everyone's cookie's look kinda moist! My cookie part was VERY crumbly, and hard to keep it together. Perhaps I didn't blend them enough in the fp?

Looks good Cinnamon!! Yeah, when I did the neopolitan version, I did quite enjoy when I got to the strawberry part the best! :D Hey, how did your hubby like them??
Rawmagnolia...if the "dough" wasn't to where it held together, I'd definitely say you needed to process it a bit longer.

Rawkinlocs... my hubby really did enjoy these. He said the cookie part tastes a lot like Date-Nut Torte and he really loves strawberry ice cream and he finished off the bowl I had leftover! I'll have to try your neopolitan version, that was my favorite SAD ice cream as a kid!

Below is a recipe I got online somewhere... It is a bit different in ingredients.. something else to try.. I have not made them yet...
Ice Cream
1 cup coconut water
1 ½ cups almond or cashew milk
1 cup chopped young coconut meat
2 tbs. coconut oil
3/4 cup chopped soaked dates
Seeds from ¼ sun dried vanilla bean
2 pinches of salt
How to: Blend everything till smooth. Get half the batter and stir in 2-3 tbs. of cacao powder into it. Pour batter in ice cube trays and freeze until frozen. Using a Champion juicer with the blank attachment, feed the juicer the frozen ice cream cubes. Watch how it transforms into soft serve ice cream! Transfer the ice cream into a plastic container and store in the freezer until ready to make ice cream sandwiches.
Cacao Flat Cookies
1 cup soaked sunflower seeds (ground fine)
1/2 cup golden flax seeds (ground fine)
1 apple (chopped)
2 tbs. raw cacao powder or mesquite pod meal
10 or more soaked dates
1 pinch sea salt
Water
How to: Process everything in a food processor till fine. Add water if needed. Transfer the batter onto teflex sheets. Spread a 1/4 inch layer of the mixture on each sheet and dehydrate for 6 hrs. at 115 degrees F. Use a round cookie cutter to make the cookies. Place the cookies on the mesh sheets and dehydrate till crisp.
Assembly: Using a spatula put a scoop of ice cream on each cookie and cover with the second cookie. Put in the freezer to harden up before serving. Enjoy!

I need to make more icecream sandwiches as my second batch turned out as a flop :p I over-turned the cookie part and it is now just soooooft... and for me just gross. I liked it crunchie like I had it the first time.

I wonder if you put the ice cream into a juice can or some other container to freeze, then slid it out and sliced it if it would work?

Do NOT add banana unless you want to, but I didn't, as I don't care for the taste of banana that much, unless it's fresh, (just my weirdness-I suppose)
but the mixture should be thick and fluffy, like SAD mousse, if you blend the walnuts up enough.
what I did was place into small round ramekins, the kind with the straight sides, and they are about 2 1/2 to 3 inches in diameter, then after they are frozen hard, about 2 to 3 hours, I dip them in warmish water to soften the outside, run a knife around the outside, then plop out onto the cookie part, they are beautiful
I suppose I should take some pics for you all.

RowanC, I put the chocolate mousse into straight sided ramikins, then froze, then placed the ramikin in warm water to melt a tad, then ran a kinfe around the edge, then plopped it out onto the cookie bottom, then topped with another cookie, and here you go. Great Idea!!
NEWSFLASH!!!
I have NOW made the ice cream sandwich cookies, and put them in the dehydrator over night, they are harder, and I think better for the ice cream sandwich, although I like the chewy ones too.
so here is yet another way to make these little guys.
the pics above, are the non dehydrated version, with the chocolate mousse inerds.

I'm going to try this out with the mousse recipe soon. Those pics look scrumptious and the filling looks so smooth and creamy which brings me to a question I have for you (or anyone else who might know)...
When I make the banana ice cream and freeze it, it gets those little ice crystals in it and that really kinda spoils it for me. So, is there a way to keep my ice cream in the freezer and it NOT get all icey on me? What do you store your ice cream in when you freeze it?

hummm, Rawkie, well, I just put the mousse into little straight sided ramikins, the kind that sauces and things come in at a restaurant.
I also would try adding some nuts, they help to keep the items bound together, like in salad dressings, so the ingredients don't separate, they help in ice creams too, you might try adding a handful of cashews to the mix (i'd soak first) then drop in the FP with the bananas.
Let me know how this works for you.
I still haven't tried your neapolitan idea, but I LOVE IT. and I love your pics, how pretty they are. mmmmmmmmmmmmmmm

Thanks RP. Believe it or not, I do actually put a handful of cashews in the ice cream mixture.
But when you were making YOUR ice cream with bananas before the mousse recipe was born, what did you freeze it in before making the sandwiches or was yours icey as well?
I'm just wondering if it's a storage issue or what?

because SAD ice cream is supposed to be made of cream and whatever, and tht is smooth, I would try adding some coconut oil first, then maybe try making it in an ice cream maker too.

OOPS, I just re-read this and it sounds like I'm skirting the issue.
I put the banana date mixture into little glad freezer containers, and then I just either scooped it out with an ice cream scoop or I also tried putting it into this hamburger maker that I had from along time ago, makes things flat and round, about 3/4 inch thick but too big for ice cream sandwiches, so I cut out the center, and then once, I just molded them inside a zip lock baggie, and kind of hoped they would freeze okay,
I've tried alot of different things, I alway cover them so no air gets in, but they still crystal up.

Curleedst, I don't own an ice cream maker (YET) but I am planning on getting one soon. Meanwhile, I think I read a few posts here mentioning that some make ice cream from the "Vice Cream" book and use an ice cream maker...they seemed to have just blended the ingredients per the recipe and then put into the ice cream maker and followed the manufacturer's directions from that point on.

well i actually got around to making these using the original recipe, and they are absolutly delicious :) :) :)
i loved the topping just as is. at the moment i am awaiting a fridge freezer to arrive (Friday) as we sold ours when we moved, but i will be making these again very soon :)

I just made these and they are AWESOME!
I added in some peppermint extract, spirulina (for colour), and cacao nibs into the ice cream and made mint chocolate chip ice cream sandwiches!
WOW! is all I have to say :D

They ARE the real thing. The others that we've been brainwashed to think are real aren't. Even though I couldn't open it, I'm assuming these are raw???

Yes, I assume they are raw sandwiches per my link. Actually there are other pictures at this thread that also rock. I am wanting to get down about another 15 pounds and it's not been easy. Regardless I saw I was up about a half pound yesterday and maybe that is my lifting, but really I think it is my lots of fruits and some nuts. Seem to add weight to "my" body. Can't speak to others, but this doesn't help me when I over eat either.
Grandbaby from TX visiting. She's 3 and believes I have the real ice cream here that I make. She loves it with just plain bananas. I am freezing in Tupperware bowl covered with bag. I bet I should be hunting for stainless steel muffin pans and put my mixture into the "pans." Not sure if glass will break in freezer or not as I have old glass bowls.

Have you turned your g-baby onto green smoothies? Use high colored fruits to hide the green if she's picky. She'll love them! Do YOU drink them?
Oh yeah, ditch the scale! Come on! A half a pound - puleeze. I can't tell you the last time I weight myself. My batteries ran out in my scale and I don't care. My clothes tell me.
