rawkinlocks,
i just looked at your slideshow on eatlivefood.com -- gorgeous!
your turtles looked great -- when i tried them at holiday time, they never set up. they were way too sticky to serve, even after refrigerating. i thought it was because of the honey, but am reluctant to try them again. any advice?
if anyone else has ideas, that would be great, too!

Well, if you notice in the undercaption, it says, Turtles from Living on Live foods book with modifications, or somthing like that.
I LOVE the turtles, but I found they didn't set up either, so I just left them in the dehydrator, and scraped off a couple when I wanted them, I dehydrated them for 30 days straight, still wouldn't set up,
Now you HAVE to admire a food that does that. LOL
anyway, I do love them, I make them alot and they are great, they are just great to eat in the bath or hot tub at our house.
I've never even tried (after the first time) to get them to set up, so, we'll need to find out how Rawkinlocs did hers for sure.

Thank you for the compliment. Yeah, they don't set like the Turtles candy we used to buy...they will be kinda sticky on the fingers and yes, as you eat them you will constantly be licking your fingers! But isn't that one of the best parts? :D
I'm trying to remember the modifications I made...I think I, for one, used carob AND ground cacao; not sure if I used honey or agave, and I think I added some coconut oil to it. OH...and I whipped up some caramel using Rawpriestess' recipe (please do a search for "caramel" and it should come up) and I mixed that up with the nuts (used walnuts AND pecans) and then topped with the chocolate sauce. Yep, that was the main modification I made aside from what I mentioned before.
I also dehydrated as instructed and then refrigerated them. They were't VERY sticky, but just a little soft and not totally hardened.

Are the recipes for all those goodies on that table from Alissa's book or are they your own recipes Rawkinlocs? They all look so yummy. I think it is time to start saving for an excaliber dehydrator since it seems to be so much more versitile for the things you can dehydrate.. I have the cheapy round one from Wal-mart and it does it's job for what I have wanted to make... But some of these things in like a pie plate etc. i need the excaliber. Right??

I have some Turtles in the dehydrator and just had to sample one, wow these are GREAT!
I used Rawkinlocs idea, made a batch of the Caramel Sauce and then Alissa's Turtle recipe. I didn't layer them, just combined both mixtures. They are setting up really well, are still sticky but they've only been "baking" for about an hour! Not that I am impatient or anything?!
I will try to answer your question Aromaticwings but I've never used anything but the Excalibur and I do love it. The tray size and adjustable temp control are great. I've just bought a 9 tray from a girlfriend and will be giving my borrowed 4 tray back to my son, I've had it for a few years so I am sure he will be glad to get it back!

u could try keeping them in the freezer too. they should still be soft and gooey, but a little less so. that should make them easier to eat, which is always a good thing :)

Here is a picture of the Turtles I've been enjoying this week, they really are so good!
This is a combined recipe of the Caramel Sauce (Rawpriestess) and Alissa's Turtle recipe just mixed together, based on Rawkinlocs idea of how she made hers. I put them in the dehydrator for about 4 or 5 hours and they set up nicely, then I've been keeping them in the fridge. Please do try them, you won't be disappointed!

i use michelle fromsadtoraw.com 's turtle recipe and its just gorgeous..i always wondered what turtles were..ah in the usa you have turtle candy baars right ?
talking of choc check out shazzies white choc recipe..its on her march journal..oh it is awesome..its the best raw thing ever i declare...

Rawkinlocs-the few hours in the dehydrator really set these up and they weren't sticky after that and being in the fridge for a bit. For a special occasion I will make these and put them in individual candy holders, they'd be so pretty like this.
Marigold-I'll have to check out both sites you mentioned for more candy ideas, thanks!

Shelah-here ya go! The first recipe is from Rawpriestess, it is her Caramel Sauce recipe. I make one batch of this...
1 cup dates (pitted and unsoaked)
1/4 cup almond milk
1 dash sea salt
1 tsp vanilla extract, or 1 inch vanilla bean scraped
1 T raw honey or agave
Mix all ingredients in a food processor until smooth and well blended.
Then make one batch of Alissa's Turtles on page 486. I modified this recipe a bit using walnuts and pecans for the nuts (and I've added cashews and raisins to one batch also) and for the honey I used agave.
Mix both recipes together and dehydrate for maybe a half day, checking just until they aren't very sticky and then I store in the fridge.
This is now one of my favorite recipes and non-raw fooders love them and would never guess they weren't "regular" candy.

I'm sure glad this thread came back to the top, I haven't made any of these for months so I guess it is about time! And yes, they really are THE best raw or SAD candy I've ever had!

I was really happy to read this thread. I tried them once and when they wouldn't set at all, I figured I'd messed up and didn't try them again. I'll be making them soon, with the modifications. :)
