Has anyone ever heard of a JICAMA(a mexican potato) or a hot water cucumber. I found them at the super market yesterday and was thinking about buying the cucumber but thought I better ask to see if their any good.

Yeah, they're good. I usually grind them up and put them into nori rolls or collard wraps. You can also cut them into french fry-sized pieces and use them to dip. I think sometimes people dehydrate them, after marinating, to make a crunchy treat. They're also good in salads.
Do a forum search on jicama, I'm sure you'll find a few recipes.

they are sweet to me,
you need to peel them, and they can be huge.
Alissa makes her potato salad and french fries using jicama.
I have tried them many different ways, and they are always good.

alissa's potato salad is amazing. it uses chunks of jicama for the 'potato'.
i also like to just cut it in strips and dip it in hummus or some other dip.

One of the cool things about living on the border of Mexico, is that we have a lot of different foods in the grocery stores. Here they store sell jicama cut up with lime and chili powder in the produce section. Traditionally they squeese the lime juice and add chili to taste. Mmmm..... They also mix it with mexian papaya's (They also have cut up cucumbers, cactus, papaya and mangos) It's great when you are in a hurry and don't have time to prepare something. They make a great "chip" for dips also.

do you peel them using a knife? I tried with a vegetable peeler with no success. I'm afraid to peel with knives :o
