View Full Version : Raw recipe for shiitake mushrooms?

Hi,
My husband and I bought some beautiful fresh shiitake mushrooms. Does anyone have a good raw recipe to use them with? preferable not too difficult.. we are beginners! :confused:
I think they'd probably be delicious marinated and throw into a big raw "stir fry" of veggies. I'm sure others will have more exotic selections for these delicious fungi!

Hi,
I make a nori roll with shitakes that is kind of "sushi like". I slice the shitakes into thin strips and briefly marinate in a little little tamari and vinegar whie I place a nori sheet that I've warmed in the dehydrator flat on a bamboo roller mat. I spread a thin layer of well soaked and well drained wild rice out over the nori, sprinkle with a little sesame seed, then make a row of the shitake strips about as big around as my finger from one side to the other. Then I roll it all up, and slice into 3/4" long bite size chunks with the shitake in the middle, surrounded by a ring of wild rice, surrounded by crisp nori. . Serve with freshly grated wasabi (if you can find it) pickled ginger, and a fresh shiso leave.
I know, I know, but I actually try to keep that stuff on hand. :)
Shitake mushrooms are prized in Japan for their strong healing properties. .

I made a chowder with corn, potato and shitake mushrooms last week. it was HEAVENLY! This is what I put in it:
almond milk base
1 tbsp tahini
1/2 cup chopped parsely
1 idaho potato, diced small
5-6 shitaki mushrooms, diced
1/4 onion
1 clove garlic
2 soaked dates
1/2 tsp curry
1/2 tsp ginger
1 tsp sea salt
pepper to taste
1/2 red pepper
3/4 corn
1/2 cup celery, diced fine
1 cup spinach, chopped fine
blend almond milk, spices, garlic, onion, salt, pepper, tahini and dates. Pour into sauce pan, add chopped veggies and heat to just warm, stirring often to make sure it doesn't get too hot on bottom (optional)
THIS is COMFORT FOOD!

Simple recipe I invented because I can't deal with complicated recipes that require time and prep...
shitake mushrooms
snow peas
sesame seeds
tamari
sliced/grape tomatoes
onions
garlic
Marinate overnight
leave out the next day to get to room temp.
dehydrate a bit or not and enjoy!
my version of stir fry
you could add brocolli too I suppose! (think I will next time now that I look at this!)

That sounds very good. How long do you soak the rice?

That sounds very good. How long do you soak the rice? Wild rice is a lonnnggg soak. 48 hours or more to get soft enough to eat.

Hello, and shiitake contains many Vitamin D :D , in case the sun will ever go away after this very warm summer :p
