Hi - I am new hear and need some help and recipes for purple corn. I have some that is dried. Per all the info I have read, it is easiest to soak for 8 hours and use the soak water and can be used for 3 soaks. According to the source, you can then use the soaked corn in recipes. Here is my question, would the corn still be good? Anyone ever used dried corn for chip? other recipes. It has such neat nutritional value that I want to get the most out the corn possible.
Thanks,
Mindi

Hi Mindi,
You could do a search on the internet and see what comes up!
I have never used dried corn...always fresh or frozen.
I guess you could give it a try and make some corn chips...(I could give you a few good recipes) and see what happens.
Do you have a dehydrator?
Let me know,
Pansy ;)

Thanks so much for your reply.
I have searched and searched but can only find the info for soaking. After using the water for smoothies and tried to make corn chips with 1 cup soaked purple corn, 3 cups frozen, some ground fax and spices. Then I dehydrated the stuff until it made nice dry chips and YUCK - :o it was awful.
Here is a link to one of the sites that has some info if anyone it interested.

As for the dehydrator  - I am a culinary possessed person..... I have 3 now, but we do a lot of gardening and storing - Kids love fruit roll ups too.
I am trying to find a recipe for pumpkin pie roll ups if any one have tried.
Again, thanks so much - I always have off the wall questions.

Mindi,
You keep those off the wall questions coming, that is what makes this board so interesting, instead of the usual questions.
Sorry, your corn chips didn't turn out! I LOL about all the dehydrators...good for you!
It was so funny, because I have never heard or seen purple corn...interesting website.
Good Luck,
Pansy ;)
