Sweet potato recipe?

I'm in love with sweet potatoes, but I have yet to find a raw recipe for one, or I have and just forgot about it. Can anyone share? I'm especially looking for ones that will do well with Okinawan sweet potatoes (they are purple on the inside and soooo sweet!). Thanks!
