Has anyone tried this? I'm looking at a head of cauliflower this week wondering what creative thing I can do w/ it.

Not me! I can't stand the look or smell of it (cooking).....it's a horrible memory from childhood. I don't think I could do it even to make mashed potatoes. Let me know how it is.

I made the "mashed potatoes and gravy" it was delish - hubby said it reminded him of grits and gravey the southern boy that he is.

Now this is interesting...is there a reason why actual potatoes aren't used for living mashed potato recipes?
Just curious about why no one uses potatoes. Even for "chip" recipes, I never see anyone using sliced white potatoes in the dehydrator...why is that? I've seen recipes for dehydrated SWEET potato chips, but not white.
But this recipes sounds good. When I get my book I'm going to try it out and see how well I like it.

Hi Cheri,
Not sure about the dehydratting but white potatoes are just yuck. VERY starchy and pretty tasteless. I believe it's also toxic if eaten in a fair amount coz of an alkaloid substance in it. It's really good grated up and used for sunburns though!!
They're pretty barren in nutriets too, if I were out in nature there'd be many things i'd eat before I dug up a potato...

i think thunder is right but i have seen recipes for potaoto crisps and i have made them and they are divineeeeeeeeeeeeeeeeeee
arent sweet pots the more natural and white the hybrids

I agree that they are awful-tasting (raw) and probably wouldn't make a good candidate for (raw/living) mashed potatoes now that you put it that way.
Marigold...I'd LOVE to hear more about the potato crisps! Do you have the recipe or reference to where I could find it?

I made the "mashed potatoes and gravy" it was delish - hubby said it reminded him of grits and gravy the southern boy that he is.Sweetlips, you have saved me from ever making myself sick with corn grits again. Yes, every 6 mo or so the desire gets so strong after a week or two fighting it I give in. Within 2 hours I am extremly nausiated. This lasts way into the night. Then I'm congested for days. Can you imagine anyone going through that for grits?
Now you have given me raw grits. I may eat them every night till I get plum tierd of them. Don't know what Alyssa's gravy is but I'll use chopped tomatoes, strained to a gravy like consistancy. Yes, I have ordered her book.
I'll be letting you know how this turns out.

I made mashed potatoes by homogenizing a head of cauliflower w/ about a cup or less of macadamia nuts (add sea salt and pepper/& maybe a splash of oilive oil). I was never a huge fan of raw cauliflower so I didn't expect much... BUT! it was so wonderful that I make it all the time now! :p Also- it's so quick and easy- and you really can't mess it up. ;)

I've done been to the store before breakfast this morning to get the cauliflower and tomatoes. Think I'll grind some almonds then blenderize them with the tomato water and stir the tomatoes back in for the taste of flour and tomato gravy. Got some mushrooms and am marinating them to go with my grits tonight.

Rawadventures and Vegggeeemom I made the grits as posted above for the mashed potatoes, just left them gritty instead of blenderizing them smooth. Also made the tomato gravy as posted above. Did not add back all the tomato water to the ground almond flour. Hubby loved it. I thought it was better than real grits.
I rarely eat nuts and had cut olive oil and salt from my life, so having all three in one meal was a bit much. Even so it beats making myself sick with real grits. I now have a substitute I can live with when the craving for that food becomes strong enough to want to give in.

You might try adding some corn to the recipe for more of a corny flavored grit! I miss grits as well, so do this with the cauliflower, flax/borage oil, and corn. Very very tasty!

Thank you for the suggestion. I had thought of using fresh corn, blenderizing it and straining the excess liquid off. I believe the biggest problem I have with real grits making me so sick is that the corn itself has become contaminated.
I have had MCS for years now and have problems with many things, personal care products, cleaning products, building materials, and now GMO foods. Of course I wouldn't knowingly buy GMO corn. The thing is it has contaminated conventional fields to the extent that even the conventional seed is now contaminated. If you haven't seen it this is a neat video. Anyway, I like the taste of the cauliflower grits better so that's all right. What enhances the flavor is the olive oil and salt. Kinda like cooked grits. Hubby got me another blender that makes the old one seem like I was using a plastic kid's toy. So things will be easier to make now.
