Hi,
I just made the most incredible most realistic cream of mushroom soup ever. It tasted so good after it was done in the blender, that I did not even warm it up in the dehydrator. YUMMMMMMMMY!!!!
10 button mushrooms (even better, crimini)
3/4-1 cup of raw nut kefir
1 clove garlic
1 teaspoon black pepper
1/2 teaspoon sea salt
1/4 teaspoon cayanne pepper
Blender untill smooth, top with sliced mushrooms. Dehydrate if you like to warm up. Is good as is as well.

I made my own. It was kind of runny, but just the right consistancy for cream of mushroom soup. You can buy kefir cultures on the internet. Just google kefir cultures. You can make it like you would make any yogurt. Also google raw almond kefir, etc. for recipes. I am going to try making my own raw almond yogurt this week.

You can make it like you would make any yogurt. Also google raw almond kefir, etc. for recipes. I am going to try making my own raw almond yogurt this week. Raw nut yogurts would work just as well in the mushroom soup. I read on the internet that costco will be carrying a almond kefir (I think it was almond). It is probably already in the stores. The brand is Lifeway.

I've searched through the posts but haven't actually found instructions on how to make a raw vegan kefir. Can anyone share?
I'd also like to be able to use the one raw vegan source of kefir starter so a recipe designed for any kefir-starting powder would be ideal (as opposed to instructions using a specific brand).

No water added. The mushrooms have water in them. Did you notice when you used to cook mushrooms that there was always water in the pan?

Oh. Yes I do remember how much water they throw off. I am going to make this soon as I adore mushrooms and missed a good mushroom soup. Challenge will be the kefir I guess.
