I wanted to share a recipe that I created a few years ago...I made some today, and as always I am surprised at how sweet they are! They are a great treat to take to parties where your non-raw friends can enjoy them.

I call the recipe, ALMOND- ENJOY!
30 dates soaked for an hour to soften. (Reserve juice for other use)
7-8 oz unsweetened shredded coconut. (the large flake type)
2 tbsp almond butter (the raw kind from the frige section at your HFS)
Grind the ingredients in a food processer until they form a dough. Roll into small balls, (you should have 20 total) and flatten out a bit. If desired stick an almond into the top. (kind of like the Almond Joy candibar, minus the chocolate.) Place on teflex or parchment in your dehydrator , and let them stay till they are dry on the outside. ENJOY!

I have made this recipe without a dehydrator or food processer...back before I had such fancy things. I would use unsoaked dates, which I would dice verrrrry small and then hand mash with the coconut & nut butter. This recipe is a lot like date candy which many people in the raw community have shared. It is really sweet, so a little goes a long way!
I am curious what others have created in a similar way. I have also added chunks of sundried mangos and figs. Figs are delicious, and addictive, aren't they?
