Ok, I'm on day 2 of being totally raw and I'm already developed a craving for pickles. Not just any pickles, they have to be those long spear shaped pickles from Vlasic. I could polish off a whole jar in a sitting and then drink the pickle juice left over if I let myself :p .
Are pickles raw BTW?
So what kind of raw cravings have you all developed since you started going raw?
I'm guess my pickles craving is my need for something salty/crunchy. I'm going to make some kim chee tonight to help curb those cravings.

i am sure there is a way to make raw pickles!! i will check a book i have this weekend, which has recipes for different types of pickle.
in the mean time, cut some cucs like pickle shape, put on some lem juice or vinegar and sea salt!

Vlassic are not raw, because they must be emmersed in a hot water bath to can them.
however I make raw pickles every year.
You just take your pickle recipe, and don't cook it.
make sure that the cucumbers are under the liquid, weighted down with a plate and a brick in a big bucket, is our method.
it will last forever, as long as the pickle absorbs the salt,
once you want them to stop curing, put them in the fridge, keep them in the brine.
We use
about 1 cup salt to 1 quart vinegar to 1 gallon water, and then about 1 cup pickling spices and 5 handfuls of dill, aproximately, we do use our own mustard seeds that we grow, and garlic, and onion, and some hot peppers but not always, you can eat the garlic, peppers and onion too. they get pickled along with the cucumbers.

It's funny you mention this, because I noticed an advertisement for pickles in Aprils' "Living" magazine (Martha Stewart). I can't remember the company, but they said that they have a line of "fresh" pickles that are found in the grocery section, and the page specifically says that they have "never been heated". I dunno about sugars and preservatives, but it's something you could check out.

oh, pinenut, do i know about pickle cravings!! I love the Claussen spears from the refridgerated section(by the cheese and lunch "meat", GROSS!) I ate two whole jars last week :o Luckily for me though, SamuelWilson gave me a good raw pickle recipe :) I'm going to try it soon. Also, you can find just about any pickle recipe and make it raw

There is one brand of pickles that our whole foods sells that is raw. They are awesome! Right next to the raw saurkraut...but if you can't get them I know they are easy to make.
