I know my pickled cabbage will be present @ the table.

I also julianed parsnips and onions.

Any other ideas?

FYI.
The folks in the US think that we over here eat Corned Beef with our Cabbage. I am here to tell you that we (non vegans) eat Bacon with our Cabbage. I never heard of Corned Beef and Cabbage until I went to the US.

This will be the first Paddy's day that my guy will be having a large plate of veg without a piece of animal in sight. I am so happy about that. I still have to get him off The Dubliner Cheese for lunch but I am working on it.

It is going to be easy for me to be patriotic today and go green green green. I should have made green (spinach) crackers.
I have never tried parsnips raw but I loved them cooked. I always hated cabbage (cooked or raw).

I'm having sprouts for lunch. I have lentils, a spicy mix with radishes and also a bean mix. Will have some celery and peppers with this and maybe some nuts.

How about a nice vivid green shot of wheatgrass.

Chased with a cool (and green) glass of celery, kale, cuke, and maybe an apple for sweetness) juice!

Well, we are having creamy corn chowder, pesto stuffed mushrooms and pesto stuffed squash, we are having nutmilkshakes-- and truffles for dinner.

we had tostadas with lots of greens and cilantro dressing for lunch, (pizza bread for the tostada)

and smoothie for breakfast and fruit plate for breakfast.

and fruit, nuts and veggie sticks for snacks thorughout the day.

Here's what I uncooked for St. Paddy's Day:

Shepherd's Pie
In individual oval ramekins I spread a thick layer of coarse chopped (1/4-1/2") veggies (broccoli, carrots, onions, zucchini, green peppers, corn) which I had "relaxed" in a warm water bath and then drained) and topped it with a ladle of warm pecan/mushroom gravy.
Then a layer of crumbled slightly dehydrated portobello/pecan "meat" with a half a ladle of gravy over that.
Then a mounded layer of parsnip/sesame "mashed potato" over everything, spread to the edges with a spatula, and warmed under a heat lamp (or in a dehydrator) to 100 degrees. It's ok to serve it cold, but serve it warm for best taste!

When ready to serve, splash a streak of Ground Leprechaun (or if you prefer Instant Shamrock) (OK, OK, finely ground dried green parsley) across the top for color, and add a sprig of parsley.

On the side :

Irish Tricolor Slaw
Shredded
cabbage and onions, (White),
broccoli, and sweet peppers (Green)
and carrots (Orange)

Toss in a blend of 2 parts live cider vinegar, 1 part oil, and 1/2 part tamari or nama shoyu and a "bam!" each of salt and whole mustard seed, then marinate overnight (if possible)

And to finish the plate, a simple side salad of mesclun mix tossed with lime juice (because... um... you know... limes are green)

It's great! Another awesome meal from STK (Shivananda's Test Kitchen) :)

By the way, I uncooked this meal for 30 people. How many did y'all uncook for?
