View Full Version : Carrot Pecan Burgers
I made these for the first time yesterday and wow ! I ate them all by mid afternoon and had to throw another batch in for my DH , thankfully he was working late so they were just done by the time got home. He loved them and I made more at 11pm last night for him to take to work today ! I am going to hopmy elliptical for 40minutes but then throw in another batch for my lunch !
I had originally steered away from this recipe, pg 385 in Alissa's book, because I am not a huge carrot fan, but WOW all the spices in there, they are so good :D .

Hi mbf, yes they are simply amazing!!!! I love the Sunny Pecan Burgers too they are just the right flavor and consistency ect. I first I made them alot after finding that recipe in Alissas book too. Tastes just like a burger to me, who need Mc Donalds :p. Have a fantastic day. Karen

I love the carrot pecan burgers!! I tried to make the hamburger buns, but didn't really like them. HOW do you eat yours....I am going to make them again, and would like some suggestions. I thought of just serving them with avo slices, tomato, etc. and eating it with a fork, or maybe a lettuce wrap? What works for you?

even though i have a dehydrator, i sometimes make the carrot pecan burger recipe, but eat it as is, like a pate -- still awesome!

That's funny Shelah, when I tasted the burger before I dehydrated I thought it was good, but when I dehydrated it, I was surprised to see that it actually looked like a burger!

Well yesterday I ate them right out of the dehydrator ! No bun, no fork :rolleyes: they were so good. Later when I ate with my DH I had made a nice mesculin salad and just served them on a plate next to the salad.
I had thought a type of bun would be nice. I think portabellos would be to overpowering for me. I don't like heavy food so I think I will continue to eat them alone or maybe today will try wrapping in a piece of romaine to keep it light.
I had a another idea as well, I love the pesto stuffed mushrooms in Alissa's book but thought how delicious would be be to stuff some mushrooms with the carrot pecan recipe !! I might try that today as well !

I so agree -- they're one of my all-time favourite raw recipes. Have you tried them with the curry sauce that Alissa suggests? Amazing -- and wonderful if you get Indian-meal cravings. I often make them and eat them without dehydrating -- I also like them just dehydrated a little bit, just to warm them through

PS If there's any of the curry sauce over -- which there usually isn't -- but if there is, it's totally yummy with lots of sprouted lentils stirred into it as a kind of curry salad.

OK...lily, the curry sauce is GREAT! I forgot to mention that I made that too. I like it better than ketchup. I mentioned sprouting lentils in another thread, funny that you mentioned this as a salad. YUMMY. Sprouted lentils are kinda spicey, so the flavors would be great together! I'm gonna have those lentils ready at least by Sunday, for lunch.
MBF...?????? for you, what is mesculin? I've heard that mentioned alot, and I have no idea. Thanks.

I LOVE the carrot pecan burgers! I've been working my way through some of Alissa's recipes and I LOVe the falafals and the Almost Tuna recipes too. As for the carrot pecan, I put crimini mushrooms instead of button mushrooms once this week and the flavor was incredible.

I can't find crimini mushrooms.....are they somewhere else other than the produce section? I've seen other recipes using them, and I'm curious to try them.

I like to make an onion bread recipe that someone posted on this board a while ago. Then have a piece of bread for the bottom and make an open face sandwich with bread, pecan burger, lettuce, onion and tomato!

tvillemom, if you can't find crimini's don't sweat it! I've made the burgers with other types of mushrooms (button, portabella) and they still turn out great!
The last time I made them, I didn't even USE mushrooms but subbed with zucchini instead because I'm simply not a mushroom fan. They still tasted great but didn't "darken" as they do with the mushrooms, but that was fine with me.
I also made the buns and it was delicious together. I made one modification to the buns...I didn't use all the herbs called for as I wanted a very neutral-tasting bun and I didn't dehydrate them as whole buns to be cut open later, but rather made two flat rounds and sprinkled sesame seeds on the "tops" to distinguish which was top and bottom. They dried faster that way and didn't go sour on me.
In fact, took photos of it when I made them, but hadn't posted it...

Rawkin...your an angel. The whole reason I haven't made the buns again is they didn't turn out great. They were mushy in the middle, so I cut them in half, but by the time they were finished, they were alittle sour. I also think I stored them in a baggie in the cabinet, by which time they tasted spoiled to me :( ....next time should they be kept in the refrigerator? Thanks for your help....I think the bun tasted good (the first bite I tried that was actually done) but the events that happened afterward kinda destroyed it for me....anyway, let me know, I'll give them another try. They actually looked like hamburger buns to me (except for the middle)

Rawkinlocs - the photos are good. I made these but I made the mistake of making them a bit too thick. They tasted OK when dehydrated but were a bit 'damp' in the middle. Will try again and make them thinner like yours.
I must try one of Alissa's cheese recipes to put on these burgers with tomato and onion - I imagine that would be a real taste experience.

I had trouble with the buns too -- in the end I had to slice them and then dehydrate them again, so I ended up with crunchy cracker things, but I loved the flavour, and the hint of rosemary.
How thick and wide did you make yours when they went into the dehydrator, Rawkinlocs? they look so yummy, just what I was hoping for.

I too like the onion bread with the meatloaf inside as a burger, or the carrot pecan burger is good too, I make a almond mayo, with a mustard sauce, and I use lettuce, tomato and onion

After reading such great reviews on this recipe I made some this morning. They are dehydrating right now and I made the Curry Sauce to go with them and wow does it smell good! I can tell already I should have made a double batch of sauce! I think I will put the burgers in romaine lettuce to serve as I won't have time to make the onion bread but next time that will be included in this menu. Thanks everyone for posting in this thread, don't know why I hadn't tried out this recipe yet but I am sure looking forward to it!
I forgot to add... I didn't have all the seasonings for the burgers so I hope the flavor will still be as good. I'll have to pick up the rest of the ingredients for the next time I make these.

BUT: Can I substitute the pecans with any other nuts, pecans are almost impossible to get here. No problem are almonds, pine nuts, walnuts, filberts and cashews. Mac, brazil and pecan nuts are quite a problem.
Any suggestions?

Mel, Alissa had mentioned (I believe on her DVD) that the burgers originally called for walnuts but one day she was out of them and only had pecans so subbed with those and liked it even better so she kept pecans as part of the recipe when she wrote her book!
So, my guess would be that walnuts would work perfectly, especially seeing that they were the nut she originally used! :)

Thanks for the good ideas about the zucchini for mushrooms, I'm not a big fan of the shrooms in the grocery store because of how they're grown, so I've been missing out on the recipes that call for mushrooms... not any more!
I love the flavor ground fennel seed in those burgers, it really adds to the taste. Maraw's burgers on her site are also amazing, if you want a BBQ flavor!
Madmel, I'm generally not afraid to make any burgers with any nuts, you just get a different flavor. You could blend your readily available pine nuts (or cashews) along with the walnuts, etc. I've also used sunflower seeds too.

you are right, not being afraid is the best thing but I don't want to "waste" anything and had some unpleasant experiences when I changed recipes...
I am sure the more I cook raw the more adventurous I will become - hopefully ;)

I hear you madmel, when I first started cooking raw, I had to really follow recipes, because any time I tried to invent anything myself it was godawful, and I had to compost it. After a while I learned how to uncook creatively.

Well these are really really good! I will make an effort to get the rest of the seasonings for the next time I make them though, that will be fun to try. I got 9 burgers out of the recipe and have got to at least double the Curry Sauce the next time. I also think that any type of nuts would work perfectly in this recipe and even a mix would be great. And I love the zucchini idea, thank you for that Rawkinlocs!
I'll post a picture of how I served this when I get the camera downloaded.
