Okay- the best chili in the world.... I ran around to everyone and made them try this- oh, it's so good. By the way, I didn't make this recipe up unfortunately, I got it from Cousins book: Rainbow Green. I would love to take credit for it but alas- not my recipe- just our great good fortune to eat it!!!!!!!!!

Chop up:
2 carrots
2 celery
1 red pepper
1/4 to 1/2 cup leek
Add about 1/4 cup olive oil and a touch of Celtic salt, stir it up and put it in your dehydrator for an hour.
During that time in the food processor add:
1/2 cup soaked sun dried tomatoes (I add more)
4 tomatoes
2 avocados
1 T ginger
little more Celtic salt
2 T Chili powder ( I add more)
2 t ground cumin
and cayenne (anywhere from a titch to 2 t of the stuff. HOT!)
Mix this with the veggies above and put it back in the dehydrator for one more hour.
So good, so quick. Yum.

Okay- I made the chili tonight and WOW! It is my FAVORITE raw thing so far! To me, if I would add fresh white corn kernals and black olives- it would taste identical to my 'cooked' tamale pie recipe! It is a real winner guys!!!! Try it, and it is sooooo easy!

No, I haven't made this yet, but Sweetlips did and she has the Am. Harvest one too. She said her oven can be set on 100 and something degrees and she just put in her oven on the lowest setting. She also mentioned in the book that Gabriel uses 145 degrees in a lot of his recipes - like dehydrating something for 2 hours at 145 and then turning it down for the duration of the time.

I thought also to just do that "pinky finger thing" in a pot. I'm assuming the dehydration is to make a bit warm. I'd also consider putting into a dish, covering and placing on top of my warmed stove (not on the burner, but having the oven on and placing on the center of the top of the stove) for an hour or so. I've done this with my marinated greens to soften them even more and quicker. I also did this when I made Alissa's chile recipe...so I'm sure it would work.

But for future notice (if you didn't already know this) Nesco.com has some trays that are supposed to be used for the purpose of when we need deeper space on our Snackmasters. I plan on getting a couple eventually!

i don't think anything but the excalibur (which thankfully i was able to splurge on) has removable trays....so, you may not be able to do it in dehydrator.

but, before i got my excalibur...i used my big oster toaster oven for warming things. It has a temperature control...and goes down to like 100 degrees. however, if you are warming something for not too long, you could still put it in at 150 or even 200....since it takes quite a while at those temps for the food to actually heat up to that temp. you could also crack the door a little too....that is handy...rather than heating up the entire kitchen with the oven. so, if you have a big enough toaster oven try that. besides, (again, if you are like me)....you will have to move all the stuff out of the oven (that you are now using for storage!) to use it instead :)

Thanks Cherie, I knew I could get more trays, but didn't know I could get ones for this purpose. I just saw my paperwork on the dehydtrator this morning. I'll check it out.

Thanks Kristi for your suggestions as well. Both of you gave me good ideas that I never even thought of. Sometimes I'm blonder than I pay to be! ;)

I am not a fan of bell peppers or crunchy celery, but I tried this anyhow. I don't have a dehydrator yet, so I just whooped it all together and ate it like that.

I was skeptical because it looks a little ugly :) but y'all said it was the best, so I persevered. The first bite was weird eating crunchy chili, but after that, it is SO addictive! I just scarfed 2 bowls and put the rest away for lunch/dinner tomorrow so I don't get into them tonight. This will be a staple for sure!

I made the chili a couple of days ago....It is great! I dehydrated it at 130-145 for a while..because the lower temps. were not affecting it. It did not get too warm..but it softened the veggies some more and concentrated the flavours a bit more.

My SAD roommate even thought it was good. :D

I really like the way you all share recipes and ideas about your everyday Raw lives....It is fun to read about all of your experiences. I cracked up over the thread on opening thai coconuts.... :eek: :p :cool:

I skipped the dehydrating part. My son made sausage biscuits in the oven (yeah, I know ... barf!) so the oven was warm and I put my chili in there. It just got luke warm but it was incredibly delicious nonetheless. So far, this has got to be my favorite raw dish ... with the exception of stuff like date-nut torts! ;)

Hmmmmm...that sounds yummy!

Where is the recipe for the Date-nut Torte?

I made up a pecan-maple-coconut cookie recipe a while back that turned out awesome..People who eat the SAD thought it tasted cooked and gourmet.. :D It was my best "experiment" yet.

I might post it later. I don't really measure though..just taste as I go. :o

The date-nut torte is in Alissa's book. I added strawberry's to the top. I've been living on it since my birthday (6 days ago). Hmmmm... I wonder if it's still okay to eat! Sure tastes like it!! LOL. :D

I just made this chili... to me the flavor is great !! my son (16) said it was tasty... i have to get the others in my family to try (they're not home yet :) ) it didn't look that great (colorwise, that is.... kinda yucky brown) but it tasted excellent.... thanks for sharing !!! :D

Hey, who cares what it looked like - it tasted good and that's all that matters. I got the same comment from my husband, "It's different." I don't care what they say as long as they're eating it. I don't know if you say my post (somewhere), but my husband and son both nuked their "raw chili" and then topped it with cheese!!! :rolleyes: I tried!!

Just wanted to bump this recipe up for the newbies to try out...especially since we're heading into fall soon and then winter!

I made a variation of this chili tonight and BOY did it hit the spot! I omitted the avocado and ginger and used sweet onions instead of leeks. It's still delicious and very filling!

I think I must have done something wrong with this chili recipe when I tried to make it. I just couldn't eat it - it was too spicy for me and the texture was just not there. Maybe the texture brings back some repressed college memories (don't ask, gross). Could I have processed the tomatoes a bit too much?

I feel like I'm losing hope with the raw food way of life because I keep trying things and nothing seems to come out - I'm having a hard time finding recipes that excite and entice my taste buds!! It's very disheartening, especially so early in the game.

I will try to push through my bummed feeling. I'll just think about the bunch of bananas I have in my kitchen waiting to become breakfast in the morning!! :)

Don't despair, not all recipes are going to taste good to everyone. When I first went raw, there were many recipes I didn't like at all, and now, that I've been raw a while, I love them, so your taste buds will change.

Why not just eat the fresh fruits and veggies that you love?

Just go to the produce department, and buy one of each of the fruits that you like, come home and make a huge fruit salad, do the same with the veggies.

also, what did you like to eat when you ate SAD? There are raw counterparts that are excellent.

Do you have Alissa's book? she has the most fantastic recipes, papaya banana pudding, raw pizza, spaghetti, ravioli, pizza bread, meatloaf (my favorite) I make it into burger patties, etc.

But, please don't give up.

Remember, not every thing you made cooked was good either.

Thanks for this excellent reminder, rawpriestess!! I have had a few raw recipe disasters (mushroom soup comes to mind...) and they are always very disappointing. But it's very good of you to point out that not everything I tried to cook was good either. What a nice shift in perspective. :)

Oh Kris, I'm glad this helped,

sometimes I have been so frustrated at a "raw disaster" and then my dog gets to eat up the "raw remains"

and I can tell you, I've had some truly yucky disasters, and of course, they were always the super long recipes, that took days to make, with tons of expensive ingredients, out of a new expensive raw uncook book, UGH

But, I also remember the time I made cooked foods with meat:

Coque' au vin, and hated it, I can't stand wine in cooking, but I didn't know that then,

I made a french dish with 40 cloves of garlic in it, cost me a fortune, yuck,

I used to make a different recipe each night of the week, (ah the good old days, when I had some time to play) LOL

Wow, RP was very on point with the comment about cooked recipes having not always been liked! That is something we all need to keep in mind.

Also, I realize too that, while the flavors of certain cooked foods were still fresh in my mind and on my pallate, some raw recipes definitely did not taste well to me at all...the zucchina "pasta" and sauce for one AND this chili recipe.

I think when I first tried this chili, I still had the memory of what cooked chili tastes like, the texture, etc. fresh in my mind and when I had it, esp. with the avocado, it did NOT do it for me. I mean, it didn't taste "bad", but it didn't hit the spot either.

But now that it's been a while since having had cooked chili, I made it again but this time I omitted the avo and kinda made a few other tailorings to the recipe and it was very yummy to me and very much hit the spot.

So, all this to say that sometimes once you've been raw for a while and have really just enjoyed eating simple fruits, veggies, smoothies and things of that sort, and THEN you try one of the "cooked-cousin" raw recipes, they will taste worlds differently to you and you may find yourself really loving recipes that otherwise you would have hated!

Rawk: Corn(bread) leather is just fresh corn fully blended with spices ( strained a bit if you have to remove some of the liquid ). You can incorporate some sprouted grain in there if you'd wish. Place on teflex sheets in the Big D - and dry it like fruit leather or.. if you've added enough sprouted grains, it'll come out like corn "chip" crackers.

Oh my... " hit the spot " doesn't begin to describe it!

If it weren't for me already having been acclimated to cooked vegetable chili, this might have upset me, but...noooooooooooooooooooooooooooo

its WONDERFUL!

I'm putting in some freshly cut corn for my husband's before he comes home from school.

Fancy red chili power, Mexican cumin powder, minced garlic, a little bit of Italian spice, ginger root powder, celtic sea salt..

in a red sauce made from soaked dried RED peppers ( not hot suprisingly ), and a handfull of sundried tomatoes, mixed in with fresh tomatoes.

I had to ammend the original recipe a bit because I didn't have a RED bell pepper ( used green), and I didn't have all of the sundried tomatoes ( had to use dried red peppers ).

Wow..

Slightly warmed... and this would totally blow my husband's mind!

I made this chili two days ago. After sitting in the fridge overnight it was soooo much tastier!! I made it a little too hot for me and wil adjust next time. I don't care for avacado but you'd never know it was in there. I also added corn and spooned it onto a flax/sprouted wheat flour cracker..awsome...hands down my fav. raw recipe so far. A fairly small amount is very filling!

Leftover Chili is great at a soup if you add water and anything else you'd like. Warmed and this is WOW... so good when you're not feeling well.

Okay, another silly newbie question from me... :o I don't wanna screw this up when I make it... When you put the ingredients in the food processor, what kind of consistency do you process it until? Is it like a thick sauce? And then you're adding it to the chopped up veggies? Or do you want it to be chunky still?

Debra -- When I've made it, I process the ingredients until they're smooth, then stir in the chopped stuff like the recipe says. It's a chunky chili (though the veggies should be chopped fine). When you warm it in the dehydrator, the veggies won't soften; they'll just be a little warm.

Just give it a try -- don't be afraid of messing it up. No matter what, it'll be made from yummy ingredients and, if all else fails, you can always blend it together to make a pureed soup! :D

Then, if that doesn't work, you can stir in some flax seed and ground up sunflower seeds and dehydrate it to make a cracker!!

That's the great thing about raw -- you can experiment and rarely will something be a total waste.

when saying red pepper. does it mean red bell pepper? red hot chili pepper? what kind of pepper?

I didnt have bell so I went with red hot chili peppers. I love them more than the bell pepper. but hey, each to their own raw :D

After reading all these great reviews, I finally made the chili -- having to leave out the avacodo since it was too green. And leaving out the cumin and cayeene. Still it was too dang hot for me! Could be that the inside of my mouth is all rashed out (detox I hope), but I couldn't even eat one bite. One of the kids loved it, the other agreed it was a wee bit spicy. My SAD teenager refused to try it, even though, he is the one to add hot sauce on everything. Maybe today I'll pay him to try it on his nachos. ???

Next time I try it I think I'll only add 1 Tablespoon of chili powder.

Wow, BD - I can't imagine what you did to make it so hot. What recipe did you use? I find most of Alissa's recipes nuetral enough that I can easily add or take away ( in the case of a cayenne or red pepper flakes ).
I'm sorry it was too hot for you! I don't normally use cayenne, either, but I will use a dehydrated chili pepper.
I do use Mexican cumin - a good amount of it, to give it a more "chili" flavor.

The red peppers I used were marinated and dehydrated red spice peppers minus the hot seeds. They're actually sweet with a tiny, tiny bit of kick to them. I can't taste any hotness in any recipe where I've used them.

However, I'm going to have to find another source; the ones I was using are full of sulfides. ( grrrrrrrrrrrrrr)

(Since we're on the subject of bell peppers, to those who don't know: green bell peppers are not ripe and shouldn't be eaten since unripe stuff isn't good to our tummies. Red is the pepper fully ripe.)

I love this chili. Tis almost identical to the recipe in Gabriel Cousens "Rainbow Green Live Food Cuisine", which calls for 1-t tsp of cayenne pepper. If you put in that much, it is like eating fire. Good stuff!!! In fact, I'm making it today to take to our monthly raw potluck ... (less the cayenne).

All I can say is this raw chilli rocks!! I did do onions insted of leeks & I 86ed the avacado. I also added portabella mushrooms. But Yummmm. I needed this today.

I want to make this today. I'm glad I noticed HOW MANY pages were here, or I would've posted after page 1. I don't have any/can't find any leeks....so I'm going to use sweet onion. Also, what is the purpose of the avo? to cream it? I am making this with the purpose of trying it first, and then making for our COUPLES CHILI BASH with our church group. It will be the first RAW thing that most people have tried....so I really want to make it FABULOUS! Thanks. Any tips for tweeking this? Also, has anyone tried Alissa's cornbread recipe? I thought of making it also.

I have an American Harvest dehydrator. I asked about a week ago how to do chili in it. The best answer (from Samuel Wilson) was to put it in a Ziploc bag, and then lay it on the trays. It worked great for me. The dehydrating is just a way to warm it up. So, put it in bags, seal them up, and let them warm for a while. It works great! I made some yestersay. I can wait to have the leftovers today! I think I'll add some corn to it next time.

Yes, even though I haven't made it yet, I think I'll add corn to it. I have an excaliber dehydrator (a late Christmas present to myself) and I can see sealing it in a baggie and heating it that way. I used to have an American Harvester....if I still had to use it I would just use small bags. I can't wait to try this.

Hey, I am wondering if you could put this in a slow cooker on the lowest setting until it gets warm (maybe 45 minutes or so?). I have NO IDEA how high of a temp the slow cookers get to...but usually it's just warm.

Does anyone know if they get higher than 118 on the lowest setting?

I think this would be a really easy way to heat the chili, and other soups, too...

I am having my pastor over for dinner on Monday. My daughter is getting baptized and we need to meet and talk. I warned her about her forthcoming raw dinner, and she said she was open to try anything at least once. :)

I think I am going to make raw taco salad and this raw chili would be perfect to go with it!!

I bet anything that if I can make the presentation of the chili as gorgeous as that picture, she will be shocked by how much she loves this food.

My grandmother used to say that food that wasn't colorful was not as appetizing. I think she was really on to something...

Crockpots vary, but, in my experience they do. I've used a temperature gauge to find out and it can get up to 325-degrees on 'Hi';

On 'Lo,' I would just use a simple kitchen thermometer (found at most any supermarket, and inexpensive -- about $5) to dip it in and keep track. It's doable with due diligence.

OMG..I made this and it is to die for!!! Seriously good..looks like my ol cooked veggie chili too!!

FYI: newyearspromise, I made this in a double boiler pot, it came out fine...I first chopped the veggies, then quickly pulsed them in my food processor, added it to the pot with the oil and simmered for about 20mins (just enough to warm and let it get a bit tender. Then I added the other ingredients and let is sit for a bit longer making sure it didn't get overly warm (it was just warm to the touch)....soo yummmy

From what you all say about this chili, I don't think I have much to worry about. :)

Hey Newyearspromise..no worries about her not liking it; as I was making this I realized that this could probably be fed to a non raw person and they probably wouldn't even think it was some "weird" raw food (lol, gotta love how non raw fooders think we're soo odd until they try one of the fab dishes). I even tried it out on my meat eatin brother!!! lol..and he said, hmm...could be just a bit spicier (now he obviously knew it was vegetarian, but hadn't even realized there were no beans in it!) ~ thats how good this stuff is!!! can't wait for lunch ;)

I made this recipe once before and thought it was ok. This was my first attempt at making RAW recipes. I knew I wanted to try it again with doing somethings different

example

I didn't chop up the carrots with a food processor I used a knife.

add more seasoning.


So this morning I attempted to make it again. This time I chop up veggies in a food processor. I have them in the AH right now. Then I made the second part and OMG!!! I added a jalapino and upped the seasonings and it tastes better than my cooked chilli I could eat the second part of it just like that without adding any of the veggies I have in the dehydrator LOL!!!


This is now gonna be my favorite next to my carrot/peacan burgers

I made the chili last night.

I have to say, it's now up there in my top five of raw recipes. I've made a lot of stinkers. Even my husband, who HATES raw food, was like "OMG, this is REALLY good!"

I left out the ginger.

Also, I managed to get it to a very "cooked" texture by spreading it out thinly on 2 teflex sheets and leaving it in the deydrator for 2-3 hours. It really tasted like a cooked bean chili. I had that comfy, warm, "heavy" feeling in my belly after I ate it, which was great cause I was all snuggled up on the couch and it was snowing outside.

I'm going to work on using this recipe as a base but with different spices. I think with some cumin, curry and coriander you get simulate a nice indian dal. Add some raisins and some mango slices on the side. . . the possibilities are endless.

YUM!! I just made this and did not have any carrots, so I used yam and YUM!!

I also put a half tablespoon of fennel seed in there. I got turned on to that a couple of years ago in my cooked chili.

I am so glad you made this earlier today because I don't know if I would have found it if it hadn't shown up under new posts. Boy am I glad I found it. I made this for dinner and it was delicious -- definitely will be making it again. Plus my dobe girl (as in doberman) loved it and I don't feel guilty about feeding her people food that is just veggies...Sidenote: she also loved the fresh coconut from the young thai coconuts that I opened successfully earlier today...

Anyway, this recipe is definitely worth a try...

How long do you soak sun dried tomatoes?



Okay- the best chili in the world.... I ran around to everyone and made them try this- oh, it's so good. By the way, I didn't make this recipe up unfortunately, I got it from Cousins book: Rainbow Green. I would love to take credit for it but alas- not my recipe- just our great good fortune to eat it!!!!!!!!!

Chop up:
2 carrots
2 celery
1 red pepper
1/4 to 1/2 cup leek
Add about 1/4 cup olive oil and a touch of Celtic salt, stir it up and put it in your dehydrator for an hour.
During that time in the food processor add:
1/2 cup soaked sun dried tomatoes (I add more)
4 tomatoes
2 avocados
1 T ginger
little more Celtic salt
2 T Chili powder ( I add more)
2 t ground cumin
and cayenne (anywhere from a titch to 2 t of the stuff. HOT!)
Mix this with the veggies above and put it back in the dehydrator for one more hour.
So good, so quick. Yum.

It is delicious and one of my most favorite raw main dishes. If you like, Alissa's Onion Dip is the BEST of top of a bowl of this chili, oh my goodness... yum!

I finally made this chili tonight for dinner, and it is UNBELIEVABLE!
*I didn't dehydrate it and I sub'd green onions for leeks and didn't have any celery. still it was excellent.

And yes it is good! I had contemplated cutting the recipe in half but did not so I hope that it still tastes good tomorrow at work! (Will bring some lemon slices and see if that helps.)

Edit: I used the mild mexican powdered chili that I get in the Mexican spice section. The secret with chili is every time you cook it - it gets hotter. Now I don't have to worry about getting it too hot. This is the chili that I formerly used for my tamales and camerons. I get my cumin at the Asian stores and it is much cheaper and the same as the Mexican. They also have chili powder if it is an Asian store that Indian people go to. I haven't bought their chili yet because it is not labeled hot and mild etc......but it looks exactly the same - just like the cumin!

The chili was better the 2nd (and 3rd!) time I made it. I use LESS ginger, and I add a lot of garlic powder. The ginger gives it that weird tangy taste, and I think the recipe calls for too much. So I used less than a tsp the 2nd and 3rd times, then added lots of the garlic powder, and cumin/chili powder. Then it was good enough to make the third time, when I did the same.

Fresh / Dried Equivalents

1 tablespoon of fresh herbs = 1 teaspoon dried herbs
1 medium clove of garlic = 1/8 tsp garlic powder
1 medium onion, finely chopped = 1 teaspoon onion powder
1 teaspoon grated fresh ginger = 1/4 teaspoon ground ginger

I've made this a couple of times and it is ALWAYS good. I add alittle corn to it also. I made it for a couples "chili bash" for our church group and ALL the SAD eaters were eatin' it and askin for the recipe.....noone could believe it was not a "regular" cooked food :D

I just read this thread....wondering what people were saying....this is one of my ALL TIME FAVORITES!! I just went camping a couple of weeks ago...with all SAD eaters...they loved it! They were commenting on how fresh it tasted, with the flavors just "popping" out at you! THis is really, really one of my favorite recipes. I really gotta try that cornbread leather someone mentioned. It would be great with it!

This is the most amazing chili.....only one thing ,that I added, that others may want as well- I went light on the cayenne but did ton's of crushed fresh garlic- I have it in the dehydrator....and I keep running back for another taste-haha!

oh ya....I also added the corn- stirred in at the last mix step.

As I sit here tasting it....(yes, again!) I think the avocado is just rounding out the flavors, giving it a richer base. I would think you could omit them all together and it would just be more of a tangy flavor!- I did not add the oil that it called for- But 2 avocado's in the entire recipe and it made a HUGE bowl....maybe 4-6 servings!

Last night I finally made this with the ginger and the avocado.....and I have to say that I like it with both. Before I held out the ginger and avocado because they are not nornal ingredints...but I love it...gonna go have some right now! :D I used to just add extra sundried tomatoes and reg tomatoes and water. I think I like it better with avocado and ginger.

Oh my!!!! I just ate the last of my Chili :-( (made it just the way it says). I LOVE, LOVE it! I still can't believe how satisfying raw food is & I've been raw for almost 5 months. I had my girlfriend over for this Chili dinner (she is NOT raw) & she couldn't stop raving about it. She loves everything I have ever made. This meal is so satisfying & rich. I usually dehydrate the diced veggies and I add corn, but you dont have to dehydrate them. I only dehydrate them for and hour or so. Mix the remaining ingrediants in the food processor and stir in the dehydrated veggies when they are done. At this point you can dehydrate it again if you want to eat it warm but its delicious warm or not! This is one of my favorite recipes and it is easy to carry to work as it is great at room temp. Enjoy!

Yes, this is the Yani chili recipe listed on the first page of this post, I added corn as it really makes this taste soooo good! I used Alissa's recipe for tortillas (page 387) and make corn chips out of it, this is the cracker in the picture. These are so good and the flax is ground. I'm not fond of flax crackers with the whole seeds so these work great for me! And I think that Onion Dip is good on just about any main dish! Glad everyone liked the picture!

I personally find that the veggies come out JUST LIKE COOKED veggies! Of course I leave them in more than the hour!

I just made 2 trays of the veggie part of the chili recipe! I dried them till crispy so I can store them in bulk & just add them to salads, chili etc as needed! Plus they are great as a snack by themselves! I figure I can soak them for a couple minutes & make chili in an hour or less! This saves not only time but also space in my fridge!!

I would like to try that...let me ask, though. I have a dehydrator that works, but I noticed it doesnt have a fan in it. It does, however, have vent holes. Will that work or will it "cook" the chili to a temperature that is undesirable? There are no temperature gauges on my dehydrator. :confused:

Thanks you so much for posting this recipe- it is incredible! I drastically cut the amount of avocado, cumin and chili powder and I add a little agave nectar. It is soooo good! My husband (not raw) really likes this recipe as well.

I made this a while ago. I didn't use cayenne and I used fresh ginger. Instead of the chillie powder I used just a pinch of it, and a tsp each of the ingredients in the chillie powder other than the chillie pepper.
When I first made it, it didn't taste like chillie particularly. But the next day - wow!!! Exactly like chillie, I would have sworn there was beans in it, the avocadoey sauce tasted like soft beans.

Since it's your staple, I figure you're a good one to ask. Now does it shine like that recipe by RawVeganMom. Wow, wonder gave it that "shen." How are you storing yours? I made this chili last night (I tweaked the recipe a bit though) and let me tell you, it was the best smelling stuff I've had in my dehydrator so far!

I tasted the chili without the veggies in it right out of the food processor and it was pretty tasty... then I tasted a little bit later with the veggies in it and loved it! I put it in a container, stored it in the fridge over night, and now it's sitting in my desk at work waiting for lunchtime! I hope it's just as good even though it's been sitting here all day and isn't coming straight out of the dehyrator. If it's as good as I think it will be, it is definitely going to be a regular meal for me!

carolg...i made an enormous batch of this yesterday...no exact measuring
example--lg. bag of organic Costco carrots, 2 large red bell peppers, a whole bunch of celery, whole food processor of grape tomatoes, etc. As a matter of fact this was the first time I didn't dehydrate and it's TASTY! I store it in my fridge in a large tupperware and it will be gone in a week. I wrap it in romaine or other greens, sometimes I slightly nuke it to take off the cold edge and chop avo. on top. This last batch I added 3 dates...I can tell this is a winner. It's a little moister having not dehydrated...lots of shine. I left out the ginger as I over did it a couple of batches ago and pretty much had to choke the stuff down. I did add a pinch of hot pepper flakes...to borrow a phrase from Rachel--YUMO!

so I took my raw chili to work today and people were asking me what it was and saying it looked really good... I made mine pretty chunky with big chunks of carrot and peppers in it...

and it was so filling, I couldn't eat the whole thing (and I only made half the recipe).

I made my first batch yesterday and made it in two stages. First dehydrated those thin S blade food processor mush. Popped it into dehydrator. Didn't have avocados so had to take out the chili till I got the avo that night. Costco's were like bricks and thought I had a softy among the bunch, but back they all go. Finally got a good one at the market.

Nest day: Made the dressing, put the chili back into the dehdrator.

Husband said "what is that"....didn't think it looked good but he ended up again eating most of it and loving it. He's amazing--prejudges but then gobbles it all down.

It was delish.

Comment: Next time I think I'll forget the S blade. Are you knife chopping or using the food processor blades or? Mine came out very musty, but delish. Thougth it would make a great spread on chips.

I'm going to make it again, but want your wisdom first.

I'm going to go with us not dehydrated too as the wait is what I want to avoid. No it may not be as heated up, but still, I'll compromise on time savings. I used a pinch of chili and boy was it still hot. Next time, a half a pinch.

Forgive my ignorance but is this like Texas Chili or Cincinnati Chili? I'm English and we don't know beans about Chillie. I only recently discovered you eat it in bowls and its traditionally not supposed to contain beans. We eat it over White Rice, and its always full of beans. All the chillies I've eaten have been extremely mild, they don't burn your mouth at all, they're barely spicy.

Chili to me here is sliced or cut up veggies, with a hot sauce that we make, also known as a dressing, that includes chili powder. It can be as hot as you wish, so I just start super tiny bit as I don't like stuff too hot. It's easy, good and even without dehydrating too. This is what makes it very special.

I made this last night and it IS really good! It even looks like real chili....same color and consistency, minus the kidney beans and meat. I didn't have any sun dried tomatoes. They should be finished drying in the dehydrator now. So maybe I'll make this chili again over the weekend and put those in there. I am glad that this is nutless!

I am finding that I will need to keep dried tomatoes on hand for the recipes that I tend to like.

I brought some to work with me for lunch. I also brought a little for a non-vegan co-worker. He liked the Angel Hair Pasta from Alissa's book.

Based on all of the rave reviews, I made a double batch of the chili. I'm glad that I did. I want to take some for my mother, but I don't think I'll have any left, even though I made a double recipe!

If anyone hasn't made this yet, hop to it! :)

I made this for dinner tonight. I made a couple of modifications that really made the taste just perfect to me.
I added:
more cumin
some soak water from the tomatoes
some onion and garlic powder
a dash of nama shoyu
a dash of apple cider vinegar
And some agave to balance the flavors

It is just wonderful!

I just made the chili- my boyfriend (non-raw) and I loved it! next time though I would leave the veggies in the dehydrator at a higher temp for a bit longer b/c they were still a little too hard. I would also chop them up more.

A friend of mine (meat eating and not raw) was over while I was making the recipe and loved it so much she wants me to email her the recipe!

I made this last night but found the recipe somewhere else. Anywho it was okay but it definitely needs some help in my opinion. I agree that I would chop the veggies much finer or do them in the food processor. Plus I don't like things too hot so only put 1 TBSP of the chilli powder which might have been the problem. Then for the cayenne, I added in a bit of chipotle chilli. It just lacked something and I know it needed more salt or something in there. My veggies were too hard as well so will dehydrate it at a higher temperature just for a bit at the beginning as well.

I like it, it'd be realllly good with that onion dip and crackers! I'm going to pick up some raw crackers on the way to his work :)

Is it really supposed to be 2 TABLESPOONS (T) of chili powder or should it be 2 TEASPOONS (t)???? That may be why the one came out so hot!

Okay- the best chili in the world.... I ran around to everyone and made them try this- oh, it's so good. By the way, I didn't make this recipe up unfortunately, I got it from Cousins book: Rainbow Green. I would love to take credit for it but alas- not my recipe- just our great good fortune to eat it!!!!!!!!!

Chop up:
2 carrots
2 celery
1 red pepper
1/4 to 1/2 cup leek
Add about 1/4 cup olive oil and a touch of Celtic salt, stir it up and put it in your dehydrator for an hour.
During that time in the food processor add:
1/2 cup soaked sun dried tomatoes (I add more)
4 tomatoes
2 avocados
1 T ginger
little more Celtic salt
2 T Chili powder ( I add more)
2 t ground cumin
and cayenne (anywhere from a titch to 2 t of the stuff. HOT!)
Mix this with the veggies above and put it back in the dehydrator for one more hour.
So good, so quick. Yum.

Ok ya, this is good. Even with my massive changes to the recipe due to lack of items, it was quite tasty.

No leeks, just used red onion.
Omitted red pepper and added more carrot/celery.
Omitted sun dried tomatoes
Used 5 roma tomatoes to make up for the lack of sundried
Used florida avocados, all I had.
Added 2 - 3 times the amount of chili powder and cumin
Dehydrated (stuck in oven) for a combined total of 1 hour

Probably will add garlic next time.

What size tomatoes are you using?

I used roma tomatoes as they are less liquidy but are also much smaller than a regular tomato so I doubled the amount. I used 8 total and the recipe came out great!

I am new here, trying to get some serious ideas for food to prepare, and there are only two reicpes in the whole line. Anyone have anything else? Something other than the chilli and the orange chocolate things? I don't have the money to go out and buy the book just yet, but I really need some ideas.

This is delicious, although I didn't have the sundried tomatoes so I used fresh tomatoes, added a clove of garlic, also added a handful of chopped brazil nuts at the end. I'm making Alissa's tortillas to go with it. Now that's good eatin.

I also added a clove of garlic and omitted the ginger. This is such a great recipe. Also, I liked it undehydrated (is that a word?=) --I highly recommend this recipe..I'll be making it a lot this winter..and its inspired me to try some other soups.

This is just great. As someone else suggested, I added some corn and some 'taco meat' to this and it was just delicious. So many different flavors combined at once. It really does taste as good as it looks.

I just bought an Excalibur dehydrator and it should arrive in the next couple days. My question is how do you put the ingredients in the dehydrator? Do you spread it out on the sheets or use a bowl? Also what temp should I set it at 145?
