View Full Version : Another Cheesecake Recipe

I have never tried this it is from Hallelujah Kids book . If you try it let us know how it turns out! :)

Cherry Cheesecake

Crust:

2 cups raw almonds
½ cup pitted dates
¼ cup grated coconut, unsulphured, unsweetened
½ tsp sea salt

Combine all ingredients in bowl of food processor and process using the
S blade. Press into pie plate.

Filling:

4 cups raw cashews, soaked in water to cover 2 hours and drained
¾ cup fresh lemon juice
2 bananas
1 tsp ground flax seeds
¾ cup raw honey, at room temp
1 tsp vanilla

Place all ingredients in food processor and blend using the S blade
until smooth and thick. Pour into crust.

Sauce:

2 cups fresh pitted cherries (or strawberries, or blueberries or
raspberries, or blackberries)
½ cup pitted dates

Place ingredients in food processor blend using the S blade. Pour over
pie.

Top with sliced whatever berry you used and sprinkle with coconut.

Set in the freezer for an hour or more. Serve frozen.

Thanks Rawstrawberry. I like this recipe because it doesn't use all the coconut oil the other one uses!

I'm going to try it when I get home today!

I've asked this before but didn't see an answer.

What do people use to keep the crust from sticking to the pie plate? :eek:

Hi Rowan,

No problem! Let us know if it is good! Just sprinkle some raw dehydrated coconut on the bottom of the pan and it will not stick.

I still have some cheesecake in the freezer (coconut oil recipe). When I've finished that and am ready to make another, I'm going to try this one. I like the idea of using banana. Thanks for posting this.

I made it this afternoon and stuck it in the freezer for dinner.
I licked the bowl clean! It is amazing and good.

The one thing I did differently was that I messed up and added the extra 1/2 cup of soaked dates to the cheesecake but it isn't too sweet. I just won't add any sweetner to the berries ... but gosh it's good. And it LOOKS like a cheesecake too!
