View Full Version : "Roasted" Red Pepper Relish (A greek dish)

Hi Everyone!

I just had a great idea. I have not tried this yet, but I am going to when I get some red peppers. I used to go to this Greek imported foods store where I would buy these jars of a roasted red pepper type of relish. It was made with basically, roasted red pepper pureed, garlic, vinegar, and oil (I belive it was sunflower oil). It is sooooooooo good. I thought this may be able to be achieved raw.

Here is what I am thinking. Take some red peppers, olive oil, fresh garlic and some apple cider vinegar and puree in blender and then dehydrate for a couple of hours to get it to soften up a bit.

I am sure there are those of you out there who have had sauteed roasted red peppers in olive oil, vinegar and garlic. This would be very easy. Try it if you like red peppers. (Where is Samuel Wilson?)

Our Co-op makes a pate called Roasted Red Pleasure which includes cashews, garlic, olive oil and so on. Maybe I'll get the recipe and post it here to see if someone can duplicate it.

I'm wondering if slicing the pepper really really thin and then marinating them and then giving them a bit of dehydrator time would do the trick without blending.

Probably both would work. I know that the blending version is some kind of traditional dish. The consistancy is probably a little bit less blended than in a blender could make it, say maybe a food processor.
