View Full Version : Rocky Road Pudding Recipe

I've been trying to figure out something yummy to do with my coconut meat whenever I drink the juice and finally came up with a fun concoction. It tastes best when refrigerated, but is good to lick right out of the bowl too (think chocolate cake batter :p ) -- I haven't tried it frozen yet, but I bet that's good too.

Here goes:

Coconut meat from one young Thai coconut
1/4 c. soaked dates (with the water)
1/4 c. cacao powder or raw carob powder (or both mixed)
2 T. agave nectar
1/2 c. almonds

Mix everything in the food processor, saving the almonds for last so they can be a little chunky and crunchy.

Let me know if any of you try it (and like it as much as I do! :) )

thanks I didn't see this recipe. What is the difference between regular and thai coconut? I think they just have regular one's at Whole Foods. Also are there a big difference in carab powder? I ordered some from Natural Zing. It says it is from Spain. I am new to this and really don't know what to expect. It is a little grainy and smell's.

This recipe sounds really easy and yummy. Just in time too. I just got a couple of young coconuts from my WholeFoods two days ago. They always have them there. Keep your eye out for them.

I don't know what kind of stores you have around you, but one of my raw friends says she gets her Thai coconuts at her Wal-Mart Grocery store. We only have one health food store that carries them here, but the big bag-your-own grocery store, WinCo has them too.

Here's a link that tells about the baby coconut. http://www.living-foods.com/articles/youngcoconuts.html -- I'm not sure of the nutritional differences between the white ones and the brown ones, but the brown ones are MUCH harder to crack open to drink.

Alissa shows how to crack one open in her dvd and has a picture in her book of her drinking from one in her jacuzzi.

As for you carob question -- I've only bought one kind in bulk, so I'm not sure of the source. The flavor isn't as wonderful as the cacao powder for me, but I still like it. Some don't like using the cacao powder because of the caffeine (or caffeine-like) effects.
