View Full Version : I need some salt free, oil free salad dressings

I am trying to cut back on salt(no soy products either, please)and fat(oil especially). Do you know any delicious dressings that are light on fat and saltless. I am already dehydrating celery, lemon, tomatoes, onion and herbs for spice(I will process them into powder) instead of salt.

A good low fat dressing can be made for salads by blending a whole tomato with:
(1) a rib of celery and the juice of 1 orange, or
(2) a mango and lemon or lime juice, or
(3)a rib of celery, a slice of onion, and a pitted date, or
(4) some spinach and lemon or lime juice.

Try this,
cashew cream
fresh dill
lemon
garlic
tich of apple cider vinegar
cucumber (no skin)
Blend to a puree and voila! :)

blend orange juice, a few dates and a large tomato, yummy!

Eating without Heating by Sergei and Valya Boutenkohas this recipe. I use it a lot. In fact, it is a great book. Great recipes, really small so it is easy to take along. Check it out.
Sweet and Sour
1-1/2 cups water (I start with a cup and increase if I want more)
1/2 bunch basil
3-4 tablespoons honey (I use a date or agave nector)
1-2Tsp salt (I omit this)
1 large ripe tomato
1/4 cup lemon juice
3-4 cloves garlic
blend in a blender until smooth. This is very light.
