I just went raw 6 days ago and I am craving mexican and do not have a dehydrator yet? Any suggestions? Haven't had a craving until today.

Hopefully you have a juicer? If not, this recipe only uses a very little carrot juice, and you could go to your local juice bar and get the very smallest size carrot juice.
I don't have certain amounts, just went by what felt right, but there's the basic idea:
Smash up an avocado, adding pressed garlic (optional) and just enough fresh carrot juice to make it into a thick sauce. Then add cumin powder (preferably freshly ground) and Celtic sea salt to taste. It's the cumin powder that is going to give a strong Mexican flavor, so add the cumin in increments until you get it to just the strength you want.
On a plate, lay big leaves of one of your favorite lettuces.
Shear the kernels off cob(s) of organic corn add put the fresh raw corn in a nice flattened pile on the bed of lettuce. Then pour the avo-carrot-cumin sauce over the corn.
For added color and garnish, add bits or slices of ripe olives sprinkled over the top.

cdepalmer, do you have a food processor?, if so I just put a carrot or two in there and chop it up into small peices and then add taco spices to taste and then make a taco salad baby greens, onion, tomatoe, avocado ect and add the taco corrot mix to the it and voila. I love this when I get that craving it's so quick and simple but helps with those cravings too. I hope this helps.

Homemade Taco seasoning mix recipe
6tsp Chili powder
5tsp Paprika
4 1/2tsp Cumin
2 1/2tsp Garlic powder
3tsp Onion powder
1/4 tsp Cayenne Pepper
Combine all spices and place in a jar or airtight container and add to taste.

...and much easier than my recipe, where you have to mess with making carrot juice.
Love the taco seasoning recipe too. I'm definitely going to have to make some of that. Thanks for sharing that! I just love Mexican seasonings on things. Happen to have a good recipe for raw tomatillo sauce (salsa verde)?

I am wanting something crunchy. I have been so good the last 6 days no cravings horrible headaches but I guess it was inevitable. My friends are calling wanting to go to lunch. What do I do?

A huge Taco Salad is great. My fav raw vegan restaraunt has a Taco Salad that is wonderful. It uses a spicy lentil mixture as the meat. It also has "sour cream" and taco sauce. It tastes EXACTLY like a real Taco Salad.

Deradune, not sure if this is what you are looking for recipe wise
2 garlic cloves, cut in chunks
1 1/2 teaspoons salt, or to taste
1 small white onion, coarsely chopped
2 - 3 (or to taste) serrano chiles, stems removed, cut into chunks
1/2 pound tomatillos (6 - 8 average-sized tomatillos), cut into quarters
4 - 6 cilantro sprigs
1 ripe Mexican-type avocado
Mix it all together and there you go.

my simplest fav "mexican" meal is to use lettuce leaves as "tacos", fill with avocado or guac, homemade salsa (tomatos, onion, garlic, cilantro, cumin, hot peppers and chili powder in blender), sprouts, olives, etc. REALLY awesome, fast and light.

cdepalmer as far as crunchy goes I make a homemade salsa and then cut up some cabbage leaves in triangles and just dip those in the salsa so easy and tasty too, satfys the chip crunchy cravings. As far as going to lunch with friends, go to a place that you know serves salads and have them make you up one that is totally raw, I do it all the time and they are always willing to accomodate. The horrible headaches are pretty common when transitioning to raw. Hang in there -- they should be gone within a week or so! Be sure to drink plenty of water and have good elimination!

Thanks for all the good info. Are there any raw chips thru mail order? Like I said I do not have a dehydrator and can't make the corn chips yet. Thanks for all the good recipes.
I am going raw after losing a pregnancy at 18 weeks just a few weeks ago. I have wanted to do this for a long time and then got pregnant and just put it off. So now is a good time to start a new. My three year old came out saying TACO. That is all I ate while pregnant with him. The coffee, sweets and sugar have not been a problem just Mexican.
I have about 30 poounds to lose so I hope this will work because I feel great.

you are more than welcome for the recipes hope that they help stop the cravings. I was tryng to do ao search for you online to see if anyone sells raw corn chips but alsas so far I haven't found any for you. I was sorry to hear that you lost your baby my thoughts are with you that's so hard. I am glad to know that you are deciding to go raw it is a wonderful journey not always easy but life wouldn't be life without some challenges. Everyone here on the board are wonderful always willing to help answer questions ect. So congrats on 6 days raw.

I made the corn chips out of Alissa's book and they don't taste anything like regular corn chips. They were very sweet and didn't go well with the salsa (also from A's book.) I ate them by themselves and ate the salsa with a spoon! ;)

I made raw corn chips (pre-Alissa's book -- not her recipe, but no doubt similar, and some people said they actually liked it) and I thought they tasted so awful that I just threw them out.

Thanks for all the great info. So are the enchilada's good in Alissa's Book or not. I love mexican and I am going to have to find some raw corn chip recipe. I found some on line but no way to order. I miss that corn crunch taste.

This is my favorite Mexican tostada recipe
Alissa's pizza wrap, I use this like a taco shell or like a tortilla shell
I love the flavor
add some
lettuce
sliced white onion
sliced tomatoes
top with cashew sour cream and
salsa (in Alissa's book)
this is excellent, the pizza wrap tastes kind of like the taco meat, but if you want it more substantial I add
one barley burger pattie which is what I call
Alissa's meatloaf made into patties and dehydrated, then you can add a dash or two of cumin, or chili powder,
and top off with fresh Cilantro.mmmmmmmmmmmm
one of my favorites
if the pizza wrap is softer, you can roll it up like a burrito, if it is crispier or firmer, you can eat it more like a tortialla
I don't care for quacamole or avacado, but I'm sure it would be excellent in there too.
