This takes about 2 minutes to make and should be eaten immediately. I didn't measure so everything is approximate. This made two very large servings... I couldn't eat all mine. I think it could easily serve four (small servings).
Base:
2 cups cashews
3 frozen bananas
Cinnamon
Vanilla
Agave to sweeten
In a food processor grind cashews until fine.
Add cinnamon and vanilla powder (ground beans), blend.
Add frozen bananas, blend until the dough sticks together.
Add agave as needed to sweeten (not always needed)
Spread in individual servings bowls (mush up on sides) and place in freezer until the filling is ready (optional and not needed if you are going fast)!
Filling:
6 apples, cored (leave peel on if organic)
Cinnamon (sp?)
Vanilla bean, ground
Agave as needed to sweeten
In the food processor again (don't bother to wash) blended 1/2 apples with spices until fairly fine.
Add remainder of apples and pulse until small with texture.
Add agave to taste.
Mound into bowls.
Sprinkle with vanilla and cinnamon
Drizzle with agave for effect!
This is SOOOO good! The banana and cashews in the base are simply amazing - so creamy and delicious. And the texture of the apple in contrast is beautiful.
If you have fresh vanilla pod use it, otherwise just go with the other spices. Nutmeg would be nice too. Avoid vanilla extract... better to do without.
