I love, love, love roasted root vegetables (potatoes, turnips, parsnips, carrots), but other than the carrots, raw root vegetables make my eyes cross because they are soooo bitter.
Does anyone have a good recipie for raw root vegetables? Specifically for potates (reds and yellows), turnips or parsnips that won't make want to kill myself when I eat them raw! :D

The same treatment works fairly well for parsnips, carrots, turnips, radish. The secret seems to be fine shredding and long marination.
And very thinly sliced turnips and beets are widely used as wrappers for raw ravioli.
Potatoes? I dunno, I've personally never found anything to do with raw potatoes that I liked. And that's a shame, because I adore cooked potatoes. Too much. :)

YEP, I do.
take your root veggies, if they are bitter, either grow your own as we do, and pick them when they are babies, or buy babies, if you can.
if you get older ones, like brocolli, you can peal them, and the inner parts are more tender.
take them and marinate in olive oil and Braggs, or celtic sea salt or a little miso and water, over night in the fridge.
then dehydrate for at least one hour, depending on how thinly you slice your veggies, mmmmmmm, they are heavenly.
I like
parsnips, carrots, mushrooms, red pepper, cauliflower, onion mix, it is my favorite, you can add a touch of cabbage too, it makes it sweeter.

This method will work well for just root vegetables, too. And they're really pretty julienned before marinated and dehydrated. But, if you do decide to combine the roots with flowers (broccoli, etc.), be aware that they'll have different textures.
I personally eat root vegetables rarely, but I've prepared them for others and tasted.
