This is the first time I've had a real craving. And it's for chocolate chip cookies.

Sure, I can have a baked one and satisfy the craving, but I would really like to find a raw chocolate chip cookie. Any recipies or ideas. I would think maple syrup or honey would be a better sweetner than dates, and I love cocoa nibs so they can be the chips.

Here is Mysticat's original recipe for chocolate chip cookies:

Chocolate chip cookies

1 3/4 cups cashew "flour"
3/4 cup ground oat groats (or use all cashew flour for a much sweeter dough)
1/4 cup agave
2 tsp. vanilla

chocolate chips (blend 1/2 cup coconut oil, 1/2 cup carob, 1/2 cup cacao
put mixture in freezer, then chop into chunks)
--form into balls, roll in cashew "flour" and refrigerate

Pumkin Seed cookies:
1/2 cup pumpkin seed butter
1 cup pepitas
1 tsp. pumpkin pie spice
2 tsp. cinnamon
1/4 cup maple syrup or agave
1 cup ground oat groats
1/4 cup carob
---form into balls, roll in carob and dehydrate until firm (I left in overnight)

I added about 1/4 c. more of the ground oats than the recipe called for AND I added 1/4 c. of ground golden flax seeds along with a dash or two of sea salt and I didn't roll them in cashew flour and they were dehydrated. Talk about giving Toll House a run for the money...the coconut oil is key in giving them an awesome buttery flavor (but ONLY if you have a nice, tasty brand of coconut oil. I usually use Virgin De Coco but I bought some from my local co-op by Omega Nutrition and it tastes the same as the aforementioned one) You can see pics of the one's I made in the dehydrator below. In the last batch I recently made, I added chopped pecans and walnuts to half of the batch. Forgot to add that I added a little agave to the choco chip mixture.

I didn't do all of that (soak, dehydrate)...I just ground them up as/is! That's up to you if you want to do that or not, but I did not.

I find the coconut oil makes a big difference in cookies. It gives them a really rich creamy flavour - I put it in all my cookies!
I make a recipe that is similar to this one, but I use dates for sweetening (I find it milder than straight agave), and use a blend of coconut oil/cacao and just mix it right in. Rawkinlocs is right though - the recipe is DELICIOUS! Chewy and decadent! :D

chocolate pie and mint chip ice cream - both raw!!!! they were AMAZING!!!!

i went over to The Plant, a raw place in Brooklyn I hadn't been to yet...oh my g-d!!!!!!
so yummy, unbelievable it was raw! seriously, like better than the real thing!
amazing raw chocolate desserts are possible!

Hi Heather,

I suggest you read up on the health benefits of raw coconut oil and see if you might not have more use for it than you first thought. I bought my first jar of it specifically as a dietary supplement, taking a good heaping tablespoon of it every morning with my breakfast. Then I started finding all kinds of good uses for it in the kitchen. Now I put some into several of my raw desserts, like raw pies and puddings, because when chilled it helps produce a gelled consistency.

And I also use it like shortening to lightly grease cheesecake molds and pie dishes to allow easy release of the finished foods I make in them. I mean, it looks almost like Crisco, and works in a very similar way, being solid at a lower temperatures and liquid at higher temperatures, although the temperature range is lower. So I chill the mold or pie dish slightly, then use my fingers to spread a slightly film of the coconut oil. The heat of my fingers liquifies it, then the cool dish solidifies it in place. And the film is so slight it doesn't affect the taste of the dish, but it sure makes it easier to get it out. This is VERY handy.

Here's an example of what I am talking about. It's a sunflower seed pate that I wanted to mold into an attractive shape before putting out on a buffet. But sunny pate is kind of sticky, and can be hard to unmold in one piece. So I lightly greased a heart shaped cheesecake mold with raw coconut oil, then sprinkled finely chopped parsley into the mold so it would stick to the cocoCrisco, then finally spooned the sunny pate into the mold. After chilling, the pate firmed up, and the coconut oil allowed it to unmold easily. Cool, huh? And best of all, it's really good for you!

Agave nectar is a sweetener-available raw...Madhava is a popular brand

cacao is "raw" chocolate--but that's debatable
available at nature's first law and some health food stores

Can I just use all carob instead...I can't AFFORD the price of the cacao nibs! Also, I don't have agave, can I use honey, or would alittle maple syrub be better? Maybe use 1/2 honey and 1/2 maple syrup? Thanks for the tips.

I really want to try this recipe (I've had cookie cravings too!) but I had to ask, are we supposed to sprout or soak the oat groats beforehand? I thought we had to do that for all grains to make them digestable. Or does grinding them up make it okay? Thanks.

tvillemom: You can use carob and honey if you like. I'm not a big carob fan, so I mixed the two. As for honey, used that my first time making these and the honey flavor overpowered too much for MY tastes...but it may not bother you. I used the agave the next time because it's more neutral. You might also wish to try dates or date paste.

samadhisoul: I made a large amount of them and I just left them in the dehydrator until they were eaten all up. No, they won't firm up that much. They will be more like REEEALLY soft-"baked" cookies...or maybe even more like eating cookie dough that's slightly done, but still very delicious! I mean, you can't beat eating cookied dough that you don't have to worry about salmonella from eggs! :)

jadrien24: No, don't bother with sprouting as the oat groats more than likely won't sprout as it's been stated they're not "truly" raw and have been steamed. If that bothers you, I suppose you could get wheat or spelt berries and soak, sprout and dehydrate those and then grind that. But for me, I used the oat groats just ground up and I was good with that.

Hey Guys,

I can't have cashews due to a food reactivity issue so I tried the recipe with a combo of almond and macademia nut flour. I am very sad to say they came out horrible. I actually had to throw them out. I was quite bummed. They had a very terrible after taste. Any thoughts ?? Seems like you could use a different type of nut flour but I guess those 2 were not a good substitution or combo.

I grind mine in my coffee grinder to get it a little finer than the processor does.

This recipe sounds awesome! Thanks, Cherie for sharing. I definitely need to try this recipe. If anyone else is interested, RawGuru's chocolate chip cookie recipe is really good too. I've made his recipe and it's delicious! Here's a couple of pics of my attempt at his recipe. :)

Was the cookie recipie supposed to be put in a blender or food processor? Maybe I didn't read the post correctly...

Here's an example of what happens when you take a good recipie and butcher it.

Last night, I got inspired to make this. Bear in mind, that I lack:

a. intelligence
b. common sense
c. experience with raw recipies
d. culinary skill

I decided to halve the recipie, so, knowing I was going about this all wrong, but not really caring too much, I got some raw cashews and ground them up with a motor and pestle: a time-consuming, bicep-wrenching method of grinding nuts to make flour (I don't have the required oats). Eventually I would get impatient at about the time when the "flour" was kinda chunky, but I thought "That's good enough, I don't have all night."

I don't have agave, so I substituted maple syrup. I don't have ingredients to make raw chocolate chips, so I used regular vegan chocolate chips. I neither eat nor own coconut oil (it's so high in saturated fat, it prety much goes straight to the arteries the moment it's swallowed), so I substituted peanut oil. I put the syrup, chocolate chips, peanut oil, vanilla, and cashew flour in a bowl and stirred it with a spoon. No amount of stirring would bring it to the consistency required to form it into balls and roll it into excess cashew flour. So, I put it in a tupperware container, added a layer of cashew flour on top. I put the lid on and put it in the fridge.

This morning, I woke up in anticipation, slightly excited to try my recipie, but keeping my expectations low (lack of culinary skill, remember?). It was SO SO sweet! Nauseatingly sweet. I could almost feel my teeth decaying out of my mouth. I hated the fact that I had wasted healthy, raw, expensive nuts, so I forced myself to eat most of it. I think it pretty much killed my taste for maple syrup. I also though that it would be kinda hard after being in the fridge overnight, but it wasn't.

It wasn't all bad, though! I learned that simply throwing food into a bowl and stirring doesn't ensure palatable food, and that I should really get the whole recipie before deciding to cook something!

In time, I'd like to try to make this again. With the required kitchen tools.

I have never been much of a cook, and learning how to prepare raw recipes has been quite an experience and I've done a LOT of silly things... There was a thread a while back about "raw disasters", you will see mine and many other people's mistakes on that thread, I'll try to find it, LOL!

And as far as the recipe goes, I made it yesterday too. I ground my cashews in a coffee grinder to make them into flour. Then liquified my coconut oil (which is raw..and not a problem on the arteries...you can check on this site for some great documentation or google it...it's wonderful stuff) in my dehydrator till it was liquid. I then mixed all the ingredients together with a fork...added my chopped up raw chocolate chips, and mixed them in with the dough, and rolled into balls, put in a bag, and placed in the freezer. Wala! And my kids have been scarfing them down with raw ice cream, and even alone. My husband wants me to keep these on hand in the freezer at all times now. It's a good one for non raw foodist too, so I hope you give it another go! Hope that helps :)

Raw Chocolate Chip Cookies
**Warning** these cookies are addicting; eat with caution and extra enzymes.

Chocolate Chips
1 cup tahini or almond butter
1 cup agave nectar or ½ cup and 1 tbs. raisons
½ cup carob powder
½ cup peeled raw cacao beans (ground fine)
1 tsp. sun dried vanilla bean (seeds only) or 1 tsp. non-alcoholic vanilla extract
Pinch of Celtic sea salt

How to: Combine everything together till smooth. Let this mixture refrigerate for 1 hour. Now spoon this mixture into a hefty zip lock bag and cut one of the bottom sides. You will use this as a pastry bag. Take out the dehydrator tray and pipe “chips”. Pipe on more dehydrator trays. Now place the trays in the dehydrator and dehydrate at 105°F for 20 hours or until dry. Store these chips in an airtight container. These go great as a snack.

Chocolate chip cookies
1 cup soaked, dehydrated, ground almonds
2 tbs. ground golden flax seeds
4 tbs. coconut oil
2 tbs. honey or 3-4 tbs. agave nectar
1 tsp. vanilla extract (optional)
¾ cup chocolate chips
Pinch of Celtic sea salt
½ cup chopped nuts (walnuts, pistachios, etc.)

How to: In a food processor combine everything except the walnuts and the chocolate chips. Now, fold in the chips and walnuts. Stir till combined. Refrigerate this mixture for 1 hour. Take 1 heaping tbs. of the batter and make it into a cookie shape, continue this method until all the batter is used. Dehydrate cookies at 110°F for 12-18 hours or until hard on the outside and moist inside. Serve warm right out of the dehydrator with ice cream!

Have I ever mentioned that I live beside the Christie factory (as in Mr.Christie you make goooood cookies!) And that at 11PM every night they do their baking? I try to time my last dog walk to the 11PM time frame. It smells so good outside that you want to eat the air.

I just have to say, I made the chocolate chips in the recipe above and they are in the dehydrator now. Made FOUR trays of them!!! which is great b/c they will not last long with me. They were SO delicious. I took strawberries and dipped them in the chocolate batter before making the chips...OMG!!! this HAS to be the best raw thing I have tasted!!! I cannot WAIT to make these cookies tonight. :)

I have these cookies in the fridge right now...counting down the hour that I can put them in the dehydrator. The batter tastes fabulous. I used the other cocolate chips in this dough as I still had some left in the freezer. Next time though...I can't wait to try the Raw Gurus chips. I'm drooling already! :-)

"Oh what a task" is right! I just finished the recipe today and it is A LOT of work. I'm not sure if the finished product will warrant all the time I spent making them (especially when the cashew flour recipe is really good too). The one thing I am SURE i'll make again is the rawguru chocolate chip recipe ( it is the closest thing to chocolate that i have found!)...I will eat this on strawberries or freeze it for a bit then break into chunks to add to the cashew flour recipe for choc chip cookies.

Yep, my gut instinct was right (no pun intended). :) The cookies are done and while they ARE delicious, I'm not sure all the work was worth it.

But I still LOVE the chocolate in them.

I truly think recipes like this are so helpful in keeping me raw. I can get my sweet tooth fix in a somewhat healthy way. Although I am still trying to cut back on sweets and eat more greens. I could eat these cookies all day long! :D

I need help with getting a dehydrator but I'm not sure if I want to kick out $200+ for an excalibur. Any suggestions.

Okay I made these cookies today with a few changes, I didn't have the oat groats and enough cashews so I made it with a combination of cashews, walnuts, almond pulp and oatmeal to make up the 2.5 cups. Also instead of agave I used honey (I know that part really doesn't matter).

Anywho I just popped them in the dehydrator about an hour ago and wondered how long you keep yours in? Mine look kind of wet and gooey and I'm wondering if they will ever dry out at all. Do you still have the photo of yours from way back? I couldn't open that link.

Oops just realized I didn't add that extra half cup of extra ingredients you mention (the 1/4 of extra flax seed and the 1/4 of oatmeal). Just dawned on me that is why they may not work.

Update: So I took them out of the dehydrator after a few hours and just added 1/2 cup of oatmeal and 1/4 cup of flax seed. Kept them in the dehydrator for like 10 hours at 105 and they hardened a bit. So I just ended up sticking them in the freezer to harden up and I'll eat them that way. They taste great still.
