My girlfriend made the garlic toast (brigette mars book) with pulp from almond milk, and it was amazing. So I added it into my calzone crust recipe and it made it so much like cooked bread. It has a "powdery" effect on dehydrated stuff like traditional cooked flour. It makes it light and flaky and is GOOD for you! Just wanted to share.

Thanks! Always good to have ideas on what to do with that stuff.

I add the pulp from making oj to my smoothies as well.

Yep, you can also dry the pulp and grind it into almond (or whatever nut you use) flour and it's great in cookie recipes as well as pie crusts! ;)

I would agree. My local raw foods teacher gave me 2 recipes made from almond pulp. She makes banana bread (tastes just like it's SAD cousin!) and italian bread. My italian bread did not turn out so hot, but the banana bread was to die for. The first thing yet that's tasted like what I used to eat.

sigtau66,
would you be willing to share those recipes?
TIA :p

Please, the banana bread receipe. My sad husband loves that, maybe, just maybe it would help convince him that RAW is good.

Thanks! :)

Ok, doing this from memory (since I just made another batch for lunch), so before you go out and make it let me confirm later tonight when I get home. But I'm pretty sure these are the ingredients.

1 C almond pulp
1 C coconut
6 dates, not soaked and de-pitted
1 banana (or 2 small ones..or if you just like more banana flavor)
2/3 C olive oil

Process all together. Spread on teflex sheet to desired thickness (1/4" or so) and dehydrate. Should fill a little less than 1 tray in an Excalibur. Flip after 12 hours or so. After that, dehydrate to your desired consistency.

I don't think we dehydrated much after 12 hours, but I could be mistaken. Enjoy. I know my wife and I have for 2 batches, now on our third. :D

Yep, the banana bread recipe was correct. Now here is the Italian Bread recipe.

1 C almond pulp
1/2 avocado
1/2 C olive oil
2 tsp onion flakes (or the real thing if you're not lazy)
1 tsp garlic salt
1/2 tsp oregano, parsley, and basil

Process all ingredients together. Spread on teflex and dehydrate at 105 until dry to the touch. Then flip the bread. Continue dehydrating until desired texture. You can go soft and use it as a sandwich bread (my goal) or really dehydrate it and use it as a crouton on salads.

I will say my first attempt turned out HORRIBLE. We dehydrated for 36 hours and it still didn't really turn out. My teacher's bread was awesome. I think we did something wrong (thinking maybe the almond pulp wasn't squeezed enough) so we're going to try again.

Let me know how either recipe turns out if you decide to try it!

I'll have to give Dragggon these recipes, his holy quest is to find a good use of almond pulp in this lifetime. I swear it is his grail.

1 other quick tidbit. I must make my banana bread way thin because it's edible and fairly dry after only about 9 hours. Just an FYI.

The banana bread sounds good!

RP, I really think your Draggon will like using the almond pulp dried out and ground into flour! Remember you and I both discovered how much we did NOT like almond pulp in recipes? Well, I've found that doing it this way is great! :)

Hey there Rawkie,

YEP, I've already got the almonds soaking, I'll use the milk in my creamy corn chowder tomorrow, and he's gonna try a new recipe.

We'll let you know how it goes.

I have a problem with the taste of olive oil (because of doing liver flushes for too long) anyway, it seems to me that 3/4 cup of olive oil in the banana bread would be really strong and olivey. Is it????

Bet cocoanut oil would be tasty. What cha think?

I would personally reduce the oil to a couple of tablespoons and use a milder oil (coconut, flax or grapeseed) and then make up the difference with water, juice, apple sauce or extra banana.

For the banana bread, is that 1C of shredded coconut or 1C of young coco meat? Thanks! :D

I can't get fresh coconut, so I buy organic, dehydrated, unsweetened coconut in a bag at my local health food store. So I'm not sure if young coconut meat would work or not. That would be more for the adventuresome to try. :)

I mixed up the receipe this morning, using about 1/4 cup of cocoanut oil instead of the olive oil. Finger licking good! They are now dehydrating as cookies! My oldest couldn't leave his hands out of the dehydrator, and they'd only been in there a few minutes.

I used my old cookie scoop, flattend to about 1/3 inch with a criss-cross fork pattern (like one would do peanut butter cookies).

I have to confess, even I have swiped a couple before they are done. YUM!

I used a cup of almond pulp in some mexican crackers. They're in the dehydrator now. I'll let you know tomorrow how they turn out!

If you dehydrate the pulp.. how long can it be stored? Week? Two weeks?Where? in fridge? or in pantry?

I just made this and it's absolutely delicious! Taste very much like SAD.

I made 3 minor changes: I only used 1/4 cup olive oil, added 2 Tbsp of coconut oil, and eliminated the dates. I shaped into cookies to decrease dehydrating time. Soooooooo good. THanks so much!

I'm so happy that my mom loved this. She's eats SAD and she doesn't like banana or coconut. But she loved these. I'm so happy to finally found something raw that she loves.

So sorry to ask but I rarely use almonds. Is almond pulp the left over 'stuff' after you put the milk through a strainer or cheese cloth? Just want to double check how to make the pulp.
