Does anyone know a source for this? Hopefully in WA and around the Seattle area. My mom's Dr. said she needs to have this and I can't find it anywhere except for online and I don't want to have to go that route because I imagine the shipping charge would be huge.

I just found some of this at my whole foods store yesterday. It was unpasturized too! It is in the refrigerated section with the other Miso's.. I cannot remember the brand, and I"m not home to check, but it is one of the ones you can order online.

Ask your store to carry SOUTH RIVER MISO (http://www.southrivermiso.com/index_steam.html), it is superior to any miso I've tried in the U.S.
The variety available is also wonderful.
I can get it here in store, but I would not hesitate to buy it online if it became unavailable -- whatever the cost; it's that good.

I haven't had much luck getting anyone to order it. The guy at the health food store said he would check into it, but it's not likely he will get it. It's a small store and they really don't have space to store much in there. Plus there is often a minimum order they can't make. Whole Foods was suggested to me, but they're in another city and it doesn't seem worth the trip to drive all the way out there just for that. I've found plenty of miso and all sorts of varieties. Just no chickpea.

How long does miso keep in the fridge? I bought some about 6 months ago, would it still be safe to eat?
I'm thinking probably not...but just want to make sure.

My guess would be it is still good. I have had miso up to a year and was still goodl. Really love miso--have white, red and brown barley in my fridge for different recipes. I just started the challenge today, so probably won't be using until it's over. I know it's live but not really raw.
A favorite miso recipe thread comes to mind. What do you think?

Order it from South River Miso. They ship direct and their quality is superior. Shipping will cost you less than driving across town to get it. Order 4-6 jars and save a lot.

A year or more in the fridge is totally fine. The only down side is that sometimes the taste gets too strong. Traditionally miso was aged at least a year and a half, unrefrigerated, in wooden containers, before it was considered saleable. It's surprisingly durable stuff.

Is it refrigerated? If so, storage would be a problem for me to get that many at once.
Ah, never mind. I just checked. They can only ship during certain cooler months. It is not shipped refrigerated but needs to be refrigerated upon arrival. But I do see some other things that I can get, so I will just get a couple of jars and go that route.

Walkinon water, yes, it's fine, I've had the same 2 cup container for 4 years, still good.
I get mine from Marlenes' natural foods, in Federal Way on 320th, just south of Seattle, they will ship, or you can pick up, it is delicious.
the ONLY miso I ever use.

Ahhhh, Marlenes', yes, of course. It's been about 6 years since I left Seattle and I have CRS (Can't Remember Stuff) so I didn't think to suggest that to her.
