View Full Version : What vegetables do you eat?

I am trying to add more vegetables to my diet to balance out my fruit intake. So far I have spinache and dandelion in my smoothie every morning. Occasionally A salad with mixed greens and a cucumber. Also I do eat a handful of sea weed daily. I am just wondering what other veggies you all are eating.

I LOVE red bell peppers. Makes a great mini salad bowl.

Also zucchini and cauliflower.

I know some of these aren't "really" vegetables but...carrots, celery, zucchini, onions, tomatoes, spinach, kale, collards, lettuce (mainly romaine and green leaf), parsley, red or orange bell peppers, corn, cucumbers, eggplant

Now mind you, most of these I don't eat alone...but rather in salads or recipes. But it's a FAR cry from the amount and variety of veggies I ate when I was eating the SAD! I'm still not the big veggie lover, but I have come to eat and actually like more than I've ever eaten in my life since going raw! :D

I can never have enough cucumbers and red bell peppers. I also like spinach, romaine, carrots, tomatoes, the every day ones I know but those have always been my fave's

Baby spinach

Kale

Swiss and Rainbow chard

Cucumbers

Cilantro

Parsley

Celery

All colors of bell peppers

Broccoli

Carrots

Arugula

Microgreens

All kinds of lettuce

Cabbage

Barlett sweet potatote

Tomatoes

Mushrooms


So far.....I avoid the following below unless it's already in a ready made raw product.


Onions

Garlic

corn

white potatoe

and everything else I didn't mention

Hmm.. I love mixed baby greens, basil, parsley, cilantro, dill, kale, collard greens, sea beans, brussel sprouts, sugar peas, carrots, celery, red bell pepper, onions, tomatos, jimica, red and green leaf lettuce, corn, peas, hot peppers, green beans, garlic, sweet potatos... I think that is about it. Of course some of those aren't strictly 'veggie' but it all works.

I love the mixed field greens with lots of alfalfa sprouts dressed with olive oil and sea salt. When I first went raw I added more veggies like cauliflower, orange peppers, celery, grape tomatoes and zucchini. I would also add mushrooms, avocado and olives and it would be a full meal. I think I would love almost any vegetable that was drizzled with olive oil and sprinkled with sea salt; that is what really makes it incredibly delicious for me.

Boy do I feel dumb. :p I didn't know you could eat corn raw. I thought it needed to be cooked first. Next time I go to the store I'm grabbing me some fresh corn.

My favorite vegetables are celery, sweet peppers, onions and olives. I eat tons of these! My real favorite are the sweet baby bells that are in the stores now. You just wash them, hold by the stems and eat until you get near the stems. That's where the seeds are. You don't need to cut them up or anything. I also like hot peppers (not too hot though),carrots, all kinds of greens, tomatoes, potatoes, jicama, turnips, rutabaga, beets, kohlrabi, green and wax beans, peas, radishes, lentils and other legumes, edamame (don't eat soy now though),chives, parsley, basil and other herbs.

Corn (a grain, I know) is not necessarily a favorite, but I do like it in something like a corn relish or on a green salad. Cucumbers are okay. I can handle a little bit in a salad or slices to use in dip. I really neither like or dislike them. Broccoli and cauliflower are okay in limited amounts. Not really a favorite, but I can eat a piece or two with a dip or on a salad. I don't care for foods that contain a lot of these things though. Sunchokes are also okay. I can have them every now and then. But they're not something I'd want to eat all the time. Mushrooms are another thing I can eat if they are mixed into a recipe. Don't care much for them otherwise. I'm getting some parsnips in my organic veggie box tomorrow. Will see if I like those. I don't think I've ever had them. Eggplant is okay in some recipes, but sometimes I don't like it. Summer squash is okay in some recipes in limited amounts. Sweet potatoes are another iffy one. Okay sometimes, but other times I don't like them.

I'm currently making sprouts from peas, lentils and a spicy mix that includes radish. They're not done yet, but I can't wait! I keep tasting them. Really yummy. My mom always did mung and alfalfa sprouts when I was a kid. I don't really care for those too much. Mung are okay, but kinda bland. Never liked the taste of alfalfa. But now there are all kinds of seeds and grains that you can sprout. I can't wait to try the chickpeas! I just didn't want to go overboard and sprout everything at once for fear or not being able to eat it all.

The veggies I can't stand in any form are asparagus, brussels sprouts, winter squash, artichoke, and avocado. I have never tried fennel (other than the seeds) or celeriac. No real reason why I've never tried them. One day I will.

Can you get organic produce boxes where you live? We have two farms that sell assortments each week. I find this is the best way to get me to eat vegetables that I might not otherwise eat. People don't understand this and they think I am wasting my money. "Why not go to the grocery store and just get what you want?", they say. Well, that's what I used to do. And I'd buy the same vegetables each week. The ones I already knew that I liked. But now I get different things each week. The place I was getting the boxes from had set assortments. You could get all fruit, all veg, or a mixed box in family or small size. They also had a limited amount of "extra" things you could get. People began complaining because they never knew what they'd be getting and many of us like to plan ahead for our meals. And we'd sometimes get things we didn't like. Like last week when I got 3 artichokes and 2 avocados! The health food store (where I get them from) has gone to a new farm and I will get the box from them tomorrow. They do allow more leeway as to what is in the box. You are allowed to choose the 3 things you never want to see in that box. They e-mail you on Fri. and tell you what will be on the box you will get on the following Wed. You may then go through and choose to swap some of those items (can't remember now if it's 3 or 5) for something else. You also get to pick your favorite items so they will try to give you a more customized box. And you can get lots of extra items. I chose to get more celery since I eat so much of it.

I agree......just tossing anything with olive oil and celtic sea salt makes it soooooooo yummy. I'm totally hooked on celtic (grey salt) sea salt. If I can't have that, I don't use salt. Once you've had it......you're hooked. It's softer and sweeter while being salty but not too salty. Just try it if you haven't! Trader Joe's even carries it. You have to look for unprocessed grey salt. It's grey in color and so mosit that you can't put it in a grinder. The grinder won't work. I just keep it in a crock.

I forgot some too! Cabbage, cauliflower (ONLY in recipes), sweet potatoes, sure I'm forgetting something else again.

Tweesason, don't feel dumb...I didn't think you could either and when I first tried raw corn, I didn't really care much for it as it was too sweet and starchy.

But what I do is cut it from the cob, rinse it a little, toss in a bowl with a little olive oil, sea salt and onion powder and mix with some red peppers. I usually put it in the dehydrator for a little while to "warm" it and it's SO good! I also sometimes add cabbage and onions to the mix as well. Talk about good 'ole comfort food!

But you could just allow it to marinate with the oil and salt (as it's been stated in some of the other posts) and it'd still be good.

Pretty much anthing but okra. Have always gravitated toward vegetables, so raw seems more and more natural to me now. Favorites include avocados (fav), tomatoes, cucumbers, celery, greens of almost any kind, cilantro in all salads and many prepared dishes, red or other color sweet peppers, and a new like--butternut squash.

The number 1 quick addition to a raw diet I would recommend to anyone would be fresh sprouts. They are quick and easy to use and CHEAP to make at home (A package of clover sprouts at the market costs nearly $4 now, but only 5 cents to grow on your kitchen counter)

Even better, they are superconcentrated goodness. A recent study showed that fresh broccoli seed sprouts are 140 times more effective by weight than fresh broccoli at fighting cancer. So, um, lessee... which shall I add to my salad today (or juice)??... 1 oz of brocc sprouts, or 12 pounds of broccoli?

Hmmmm, hard choice.

Not being a veggie lover......I basically eat:

spinach
carrots
cabbage
various types of lettuce.

I eat alot of cucumber and tomato, but those are really fruit.

Making me hungry here for a big ole' salad!!

My favorite veggies for now...(as it changes with the seasons sometimes) are:

zucchini--my faveeeeeeee, carrots, baby greens, bib lettuce, celery, cukes, shredded beets.

I do like red and yellow peppers but avoid them and tomatoes for they are from the nightshade family...and I have Fibromyalgia.
