As long as nuts are purchased in their shell is it safe to expect that they are raw?

No, many are heated. Peanuts are even roasted in the shell. If there is a supplier, you need to call them if the nuts don't specifically say "raw" on them.

Although the point is debatable, I know many raw foodists (and other health expersts) say that peanuts should be avoided completely, due to the high incidence of contamination by aflatoxin mold. That's the black stuff that tastes so bitter if you happen to bite into it by accident, and it's a very nasty toxin.
And as RowanC said, many nuts in the shell have been heated, often to remove the surrounding fruit flesh, but sundried can usually be found with diligence. Truly raw cashews are almost impossible to find, and as expensive as gold, so many raw foodists seem to compromise a little on this particular item.

Thank you both so much!! I usually buy my nuts from BulkBarn... as there are not many alternatives here. And they luckily do lable their nuts as raw or roasted etc. Oh and I've never been a huge nut fan... so I barely eat them.
