Are pistachio's raw.. I always took them for not being raw because their shell was always cracked. but i just read that if the actual pistachio nut is green then it is raw. Is this true?! I would be so happy if it were. I could finally move off my cashew fix.

I don't know, but the Whole Foods bulk section here sells shelled pistachios labeled "raw." They also has roasted ones right next to it, so I don't think it's a mistake.

They could crack them with pressure, not cooking. I really don't know. What I have experienced is that raw pistachios are completely different from roasted ones. And not just a little. I buy them occasionally, but think it was the salt more than anything I loved about pistachios before!

If it doesn't say raw, then it probably isn't. That's a good rule of thumb.
Most nuts you buy in the grocery stores are NOT raw. They roast them. If they're in the shell, they heat them to destroy bugs.
You need to ask.
If you're shopping in a conventional grocery, chances are you are NOT getting raw (unless it states such).
My coop sells raw pistachios.. and roasted. Both have green meats in the shell. So you can't just tell by the color. Pistachios are green. Ever eat pistachio ice cream? :eek:
