Just wanted to share this, cause it worked well despite the short prep time.

I really wanted to make alissa's lasagne recipe and use an eggplant I had that was passing it's prime. But her recipe called for EIGHTEEN HOURS of dehydration?? I was really hungry and there was no way I could wait that long! So I chanced it and made most of it and just marinated thin sliced eggplant for the 'pasta' with portobellos while i was making the nut cheese (just the ricotta recipe) and the marinara (just one marinara sauce). Then took the eggplant and layered it with portobellos, chopped, the nut cheese and sauce for a couple of layers. Put it in the dehydrator for about 40 min and it was HEAVENLY. absolutely tasted like the cooked version. the only thing was that the eggplant was a "little" crunchy, but not a problem. IT was amazing-and fast.

Sounds great. I have done her lasagna and found the compnents wonderful but all together a bit too rich. :o Saying this I will make it again just using a LOT more veggies. :rolleyes:

I ended up using it as a fantastic filling for my collard wraps! And just loved the sun dried tomato marinara as well as the green spring marinara. I will try your eggplant & mushroom suggestion next time. :)

you guys are an answer to prayer. The one thing I want more than anything else is Lasagne. I'm crazy about it. I don't have alyssa's book. I HAVE to get it.

oh, yeah, I forgot I used a lot of sunflower sprouts also in there-the fresh raw greens helped cut some of the heaviness of the nut cheese. I have more for tonight-yea, lucky me!

I use spinach chopped, and sliced portobellos, thinly sliced, and also some zucchini shredded, it cuts the heaviness of the cheese and sauces for me.

You can also add a bit of sliced or diced red pepper, which adds a nice touch.

sometimes I add some of the pesto stuffed mushrooms slices, all just tossed in.

When I made the lasagna recently for a raw food potluck dinner, everyone loved it. It was a bit too sweet for my taste, and so next time, I would lessen the dates. I like the increased veggies idea too - will have to add those next time.
