Just wanted to share this, cause it worked well despite the short prep time.
I really wanted to make alissa's lasagne recipe and use an eggplant I had that was passing it's prime. But her recipe called for EIGHTEEN HOURS of dehydration?? I was really hungry and there was no way I could wait that long! So I chanced it and made most of it and just marinated thin sliced eggplant for the 'pasta' with portobellos while i was making the nut cheese (just the ricotta recipe) and the marinara (just one marinara sauce). Then took the eggplant and layered it with portobellos, chopped, the nut cheese and sauce for a couple of layers. Put it in the dehydrator for about 40 min and it was HEAVENLY. absolutely tasted like the cooked version. the only thing was that the eggplant was a "little" crunchy, but not a problem. IT was amazing-and fast.
