I sort of adapted it from Gabriel Cousens' Rainbow Green LiveFood Cuisine (his recipe used too many nuts for my taste):

Enjoy.

Stuffed Tomatoes

1 carrot
1/4 of a bell pepper
1/4 of an onion
1/4 cup sundried tomatoes
some olive oil
salt
whatever spices/herbs you like (Italian, Indian, etc.)

Chop in food processor, then spread thinkly on teflex sheet and dehydrate for one hour, to soften the vegetables a bit and mix the flavors.

Take out and mix with:

1/4 cup or so of ground up nuts (you can grind them up in a coffee grind or the dry container of a vitamix). Mix in nuts with the vegetables.

Scoop out the insides of two tomatoes and fill with the nut/veggie mixture.

Dehydrate for 1/2 hour up to an hour or so on mesh screen.

They are delicious and filling. I ate mine with sprouts and a few leaves of romaine lettuce.
