View Full Version : creamy squash pesto sauce on sunflower sprout "noodles"

Just wanted to share this idea-it turned out so good!
about 2 cups diced butternut squash
1/2 carrot
1 tbsp dried basil
1 clove garlic
1/2 onion
good squirt braggs
1 tbsp raw tahini
4 soaked dates
1 tomato
1/2 tsp curry
water to blend
put it all in the vitamix. Use only enough water to make it mix but keep it thick, like alfredo sauce. It was GREAT on the sunflower sprouts as "noodles". Man I love raw....

Thanks for the recipe! Sound yummy. Have you ever tried making noodles with a raw yam? I made yam chips for the first time from Alissa's book but I had leftover yam and put it through my spiral slicer. Then I put the mock salmon pate on top and it was super yummy. I didn't like rolling the pate in salad leaves half as much. I'm really new to this and every recipe is a new discovery. Some I like more than others. :)

I just have to say that for the record I am addicted to raw "noodles"...specifically zucchini ones...I haven't made any other types yet...I like that the zucc noodles are nice and al dente. Squash and yam would seem as though they would be quite firm....how "noodly" are they compared to the zuccs?

hey, yeah, that was good! I mixed up the rest of it with soaked almonds and more dill today to make a pate-that was good too. This was the first time I made something with raw squash that was good. I modeled it after a cooked squash pesto sauce a friend of mine invented who owns a macrobiotic restaurant. The raw tasted just a little sweeter than the cooked and felt a MILLION times better in my body!!! :)
