Ok, so yesterday I went to Uwajimayas - a huge asian store in Beaverton, Oregon. I spoke with the produce manager about the young thai coconuts.
According to her, the violet color you sometimes see inside is perfectly normal and unless the milk smells sour, there is absolutely nothing wrong with the coconut. Eat it.

I'd have to agree with her. I just got my first violet hued coconut today.. hmm.. If they could all be that good! The milk was delish and it made the prettiest violet hued smoothie. I didn't want to add anything too it cause the color was so pretty :D

I've eaten fresh young coconuts practically off the tree that were a little purple too (it's always when they are super young they look like this).
One factor that would impact this is the younger the coconut the more quickly it goes off. So possibly the really young ones are more likely to go off. Most I've had are fine though.

The violet ones I see also have mold (or discoloration) on the outside alot of the time & they taste nasty! I like em white!

DARN!, I've seen alot of these little guys, but never any pretty violet ones.
I've seen white--usually okay
I've seen pink--always bad
and I've seen golden brown--always bad
so I just don't eat em any more, too easy to get a bad one, and too hard to find a good one.
I used nuts instead.
But for those of you, who have good luck with them, I say, "go for it."
