View Full Version : I made REAL tortillas!

Last night I made the BEST tortillas I've made yet.
I put 4 cups of frozen organic corn - thawed - into the food processor.
I added a tablespoon of olive oil
and 1/2 teaspoon of celtic sea salt.
I whipped it up for a while until it was smooth.
Then, I dipped out heaping tablespoonsful onto the teflex sheets and formed them into tortillas about 4" round. They need to be thicker than you'd think because if you make them too thin, when they dehydrate they get lacy & weak. So I made them maybe 1/3 " thick.
I dehydrated them about 2 hours, then flipped them onto screens and dehydrated until they were firm.

These are GREAT!
They taste awesome.
They are flexible and will roll around my refried beans & guac
The only problem is they stick to my teeth! But I don't care.. nope!

I am going to fix them right away. I have a problem with bread and needed this. Please tell me how long did you leave them in the dehydrater?

I think it will depend on your dehydrator and the weather, but mine took about 2 hours until time to flip.
I tested them by touching the tops. When the tops were fairly dry, I flippeed them over onto the grill and peeled off the teflex. It came off easily. I think you'll just have to wing it.
Then, I dehydrated them until they were dry, but still flexible. Honestly, I don't think these would get too crispy.

:p The one I have is an American Harvest the one with the hole in the middle.
I'm trying to think how to make these with this type of dehydrater.

blessed: line the round trays with wax paper cut out in strips. place the batter in circles and spread as far as you can. This works, I made them that way.

Blessed, I have an Excaliber, so you may have to dehydrate a bit longer. Just do it until the tops are dry and you're able to flip without them falling apart.

You know I never thought of using wax paper to cover the hole.
This is a RED LETTER DAY for me, yea, yea.

Ooo you don't want to cover the hole with wax paper, not the center one if that is what you are thinking. It is how I read it. If you do the air will not circulate in your dehydrator as that is how it is made to get enough air flow to dehydrate.

I was thinking that I was to cover the entire round tray with the wax paper so that I could put a round large enough for a tortilla on there. Thanks for helping me to understand better.

I made LITTLE tortillas.. about 3.5 to 4 inches in diameter, like the little corn ones you get in mexico. They're just right and easy to handle.

Here is a photo of my cute wee tortillas!
They are sooo yummy!
These curled up because I let them sit, but when I first made them, they were flat. I think if you took them out and stacked them between paper towels, and maybe put a plate or something on them, they'd stay flat for a potluck, etc.

blessed; You will not be able to cover the hole. just strips of wax paper to cover the mesh, then round circles for batter, about 4 inches. If you were to cover the hole it would stick up too high and then the batter would flop. So do circles as big as it will let you. Bon Apetit!

Yes, it came through loud and clear. Can't wait to blend up the corn, it's out of the freezer now and just about ready to go.

I made some last nite with a little ajustments I added: sun dried tomatoes, Italian spices a little ground flax seed ( don't usually measure) Walnut oil instead of Olive oil and two cloves of Garlic( I love Garlic) I will post the out come when I get home I did not taste them this morning. I did not want to put anything on my stomache this morning before having my smoothie with wheatgrass

Mine look exactly like that !! I've been making them in various sizes, small for potlucks and quick snacking. They were one of the first 'breads' I made and have been a staple ever since.
I always add a little gr flax to mine because I think it makes them hold together better. We always have some available becaue they're such a great addition to otehr dishes....and taste fabulous. They're great with raw soups, salads, etc.

YOUR tortillas look great.
I love making them, I also add, fresh cilantro, cayenne, red peppers, and white onions minced to mine. I have tried many different recipes too, just add some spice to the tops of them, and you can eat them like chips too.
If you want less stickiness and a little more crunch you can add some flax meal, and even some almond pulp or just chopped almonds.
I've made them with fresh lemon juice sprinkled on top too, yummy.
lime is great,also and any herb of choice, although the cilantro has a more Mexican flair to it.

Hi Blessed -
You can also worry less about making them round, cut the wax paper to fit the "donut" (hole open as you learned) and cover completely. Then cut into pieces when done.
If you've got lots of dehydrating space, that's not necessary, but if you're wanting to maximize output for space, that might do it.
I had a round deydrator until recently so took this approach for crackers, fruit leathers, etc. Fortunately mine already came with a teflex-type sheet.

Oh my goodness, I made them and they turned out great. We love them now I am saved from the bread monster. Thank you so much for the recipe and the help, it wasn't hard to make them and they are so, so , so good.
I will try them with grounded flax seeds next.
We are a happy family.

If you dehydrate them for a long time they will get shatter in your mouth crispy!

Well, that's a good question. I am here alone right now so I just left them on the trays in the dehydrator and ate off of them for 3 days. By the 4th day there was one little tortilla left and it was hard as a rock. So I thought, "Wow, this would make great backpacking food if it rehydrates!"
So.... I put it in some cold water for about 10 minutes, then on a clean cloth and in about another 20 minutes I tried it. It was as good as fresh! I'm stoked! I have a new backpacking food! YAY!
I think, if you put these in a container on the counter, they'd last a few days. I think they may mold if they weren't dried completely, in which case you probably couldn't eat them. One bag of corn (2 cups) only makes about 6 tortillas (enough for a meal for 2 or 3)so I'd just make them in small batches. They only take 2.5 to 3 hours from start to finish to dry.
I'm glad everyone was happy with them. I'm going to try some of the additions too. Thanks, all.
