View Full Version : Need a recipe that uses pumpkin seeds

I bought a bunch of different raw nuts yesterday (today is my first day being raw).

I just assumed that I'd love raw pumpkin seeds, as I have always eaten and loved raw almonds, sunflower seeds, cashews, ect. Unfortunately, I find that pumkin seeds are a little bitter.

Does anyone have a recipe that uses pumpkin seeds? I'd hate to waste them.

Did you soak them for a few hours before you ate them. I use them soaked and whole in crackers. If I do not want to use the crackers with savoury toppings I add some raisens or sultanas.

No, didn't soak them. I'll try that. The cracker idea sounds good too!

Well, someone on here told me a way to make smooth ice cream with pumpkin seeds. I'll have to try and remember who it was now!
But, take frozen bananas and then a handful of pumpkin seeds and whip that up in your food processor.
Hmmm...let me see if I can figure out who told me that and give you the exact recipe!

You can also put them into a yummy grawnola...I'm soaking some for a recipe of it as we speak!

Here is a tasty recipe:

Imposter Caramel Corn (though IMHO it doesn't taste an awful lot like caramel corn, but it's a tasty snack!) by Gabriel Cousens

2 cups of silvered almonds (didn't have slivered almonds, so I just roughly pulse chopped whole ones in the processor)
1/2 c pumpkin seeds, soaked
1/2 c raisin soak water - not the raisins (I ended up sometimes eating mine with raisins and liked it, so this batch I have in now, I added the raisins and their soak water)
1 tablespoon Celtic salt (I only used 1 tsp. and that was sufficient for me to provide the "sweet/salty/buttery" kinda taste).
(NOTE: I also added a little vanilla extract and that REALLY made it good! but it's delicious without it too!)

Spread a mixture of silvered almonds and pumpkin seeds on teflex sheets. Mix raisin soak water and salt. Pour over nuts and seeds. Dehydrate at 145 for 2 hours and then 115 for 8 hours until completely dry and crispy. (I did NOT do this, I only dehydrated at 105-110 and didn't calculate how long, but just left if until it was dry and crunchy)

You can also soak them, season them with spices such as cayenne, chili powder, etc. and dehydrate for a crunchy, spicy snack!

Oh yeah, that ice cream that vegggeeemom mentioned is the best. You do not taste pumpkin seeds..... and you can add whatever else you want to it for variety.

2 c pumpkin seeds
3-4 frozen bananas chopped up
dash or two of agave

whip together in food processor... it WILL get creamy! :)

I made a strawberry sauce for mine one time and another I crumbled some nuts and stuff on top and then drizzled cinnamon and agave.

Anyway.. this stuff is the best and VERY high in zinc, which is great for cold/flu season

Mmm...that ice cream sounds good, especially if you don't taste pumkin seeds in it! I'll have to try that. Thanks Vegggeeemom and Rawadventures! Did you soak the seeds first to make them blend better or did they do just fine straight out of the bag?

Yes, RA it was you that got me that recipe. I am going to try it in the next few days!

If anyone else tries the ice cream let us know how you like it.

Not a problem at all...conversations do tend to take twists and turns and I'm enjoying this little journey.

Pumpkin seeds did not called to be soaked, so I just made it with them straight out of the bag. It is amazing to me how creamy this tastes.... this is my favorite icecream so far! ;)

When I first tried raw pumpkin seeds I thought they were bitter, too. I used to eat loads of them roasted in the shell. But roasting is out now, so I experimented and found a new way that tastes great to me. Soak for about 12 hours, rinsing once or twice during the soak, then rinse well and soak in a sea salt brine for about 6 hours. I make my brine very salty, adjust for your own taste. Drain and dehydrate for 6-8 hours. I can eat loads of them this way now. I have to hide them from my 7-year-old dd or she will eat the whole batch. I use them for a crunchy/salty/popcorn-type snack replacement and also as a salad topping.

I cannot get enough of this recipe. I have made it 5 or 6 times now.

I wonder if they might have been old or something? A few weeks ago before I decided to check out going raw, I bought both raw and roasted pumpkin sees. I bought quite a few of the roasted ones because I knew I liked them when I roasted my own. Bought only a few of the raw ones because I didn't think I would like them. Well... The roasted ones tasted bitter to me and they went in the trash. Back I went to the store for more raw ones. They tasted really good to me and not at all bitter. I've noticed this sometimes with nuts as well. Sometimes they are good, sometimes they are bitter.
