I mada a pot of sourkraut, but a day ago my husband used water from the bottle I used as a weight, and forgot to put it back on. Today I was putting sourkraut in the jars and noticed redish color. I wonder if it is fungus or it has anything to do with a fact that I used kale leaves as a cover instead of cabbage leaves(I forgot to reserve some.)

I believe the red color is a mold, but I am not sure, I do not like fermented foods. I hope someone will give you a great answer soon.

Oh, well I ate it anyway, because I love fermented foods. And some raw foodists recommend them. Serious ones, like Ann Wigmore, Brenda Cobbs(she cured herself from breast and cervix cancers without any doctors reccomended procedures).
