Today I was looking for something for lunch and ran across Alissa's beet/pear/jicama salad. I didn't have the jicama and didn't really want the greens, so I put together the following salad and it was REALLY good!

2 beets, shredded
2 pears, shredded (about the same size as the beets)
a handful of walnuts, chopped
juice from one lemon

This is really a pretty salad and it's crunchy, sweet, and very good!
I think even kids would eat it.

Thanks Rowan..I have some beets that I just did not know what to do with..I'll give it a try..

in the winter I do a beet-carrot-ginger, all grated, with a little apple cider vinegar for a dressing (you can add oil but if you let it stand you don't have to as the vinegar mellows with the sugar from the beets). It's even better with beet-carrot-ginger-apple if you don't mind combing fruits and veggies.

Yum, and it's cheap and fresh tasting in the winter when other salad stuff can be less nice or pricey.
