Pineapples are pretty cheap in our area and I really love to eat them but can any of you tell me how to use them in a recipe?
I love the taste of them and the juice is really good too. I have three of them left so if you can help me I appreciate it.

Here are some of my favourite ideas (for the three of us this week we'll have 10 pineapples!!!)
1) Bpend with a little something sweet and freeze for pineapple sorbet (we use some agave)
2) Blend a cup of pineapple with 1 tbs of coconut oil and 1/2 cup ice for a pine colado
3) Slice and eat!
4) Use as a topping on RAW PIZZA (especially good with olives)!
5) Blend with some banana and a bunch of fresh mint for a nice cream smoothy
So many ideas!!!
The pineapple season in Australia is short so we are eating loads of organic pineapples right now. They are delicious!!

I think Alissa has some ideas in her book. Pineapple cream I think. I have been using them in smoothies here at home but I cut one up this afternoon put it on a plate and my kids gobbled it up for an afternoon snack ! They are in season and also very cheap by me as well so we have been buying a lot of them too !
If you have Natalis Rose's book she has a recipe for a power joy soup that calls for pineapple..very good but I only enjoy it in warm weather.

Jezebel sauce is traditional in the South.
It is traditionally used as a topping for ham with sweet potatoes and mustard greens and other such foods.
Here is my raw version it is delish!
2/3 cup dried apricots soaked (drained save soak water for other recipe) and then pureed in the food processor
1 pineapple diced and pureed in food processor
1-4 T fresh grated horseradish (to taste the more horseradish the spicier it is)
1/2-1 t mustard powder (again to taste)
black pepper... to taste
Mix well and refrigerate to let flavors blend.
In a jar this keeps really well in the fridge, mine lasted for more than a week and was great as a zesty topping on a number of different things including flax crackers and marinated portabellas.
You might serve with...
marinated mustard greens
pureed sweet potato or dehydrated sweet potato (or plantain) chips,
and something that includes dulse as it has a kind of salty smoky flavor.

I don't have Alissia's or Nalabis Rose's book but the Joy soup recipe sounds wonderful, if you have the time could you please post it.

Dehydrated pineapple is great--and it keeps well.

I can easily eat an entire pineapple in one sitting, so having left overs is unheard of in our home,
However, I do love
pineapple on pizza, it is excellent with any type of tomato sauce, Alissa's marinara sauce, or summer sauce is good, also it is excellent as a drink, or as has been suggested, as sorbet,
but one of my favorite ways to eat pineapple is
warmed pineapple in the dehydrator, then add fresh cilantro, and a slice of tomatoe, put on an onion bread slice and enjoy, warmed, it is excellent,
I also love pineapple mixed with fresh black berries, and raspberries, and strawberrids, and then pop in the freezer, eat before it is frozen, but starting to crystal, and it is excellent.
also, take the pizza bread, add marinara sauce, add pineapple slice, and add nut cheese, add fresh basil leaves, and enjoy.mmmmmmmmmmmm
