I just bought my first bunch of collard greens:> How long do you find that they keep in the fridge? I don't have them in the crisper (its full already :D), but I don't want them to go bad either!

I also had the query on collards. It is pretty cold here in my area--and my small fridge also full--so I put my bunch (left loosely in the plastic bag) in a clean plastic tub and put in my garage on a wire shelf unit. Normally they are good for a week either this way or in the fridge.

I keep mine a section far from the freezer; so that would be low in the fridge. I like to put it on the lowest door shelf, if I can, or on the bottom shelf.

I put the stalks in a small amount of water in a glass and put a bag over it to create a mini "greenhouse" effect; put a loose rubber band around the glass to hold on the bag, if you want. This way, they stay crisp and fresh. It's also *excellent* for herbs; I've had herbs last weeks and not lose a bit of flavor or freshness.
Of course, they get consumed quickly, :) but they last a looong time this way.
If you plan on just a few days, then you can place them in plastic bags (I like to wrap them loosely in paper towels first so they don't get soggy; then I put them in the bag) and squeeze the air out, and tie it tightly. They last quite a while that way too.
There are green bags that are "produce bags" which are even better; they keep them fresher longer.
