View Full Version : frozen VS fresh corn and corn chip success ?
Hi, I am trying some new recipes today. I have Alissa's falafel inthe dehyrdator, has anyone made that and how did it come out ? Did you use a good sauce with it ? I am thinking just some shredded iceburg, tahini and maybe tomato ?
Also thought I would try Alissa's corn chips. I did a search here and was surpised to find how many have tried and failed at this recipe :eek: ! has anyone had corn ship recipe success !?! please let me know and if you made any recipe changes!
Finally, I only have frozen corn. Can I sub frozen for fresh and does anyone know how much corn the average ear of corn yields ? The recipe calls for corn from 6 ears of corn so I am wondering how much frozen corn that would be ?

Hi mbf,
I made the beanless falafels last weekend. I keft them overnight in the dehydrator and the next morning they were fabulous. Slightly crispy on the outside - great warm or cold.
At the same time I made the thai bites / pignoli thingies wrapped in zucchini slices from Chad Sarno's recipe in Alissa's book. They were super as well and didn't last long between me and my non-raw husband. (Sorry can't remember the page number as haven't got the book handy.)
Both recipes make excellent party nibbles.
The cannoli made with sprouted wheatberries was good though and so was the enchilada - that actually had frozen corn in and was excellent.

Hey MBF. I have to admit I am truly puzzled when people have trouble with the corn chips. I have made these over and over as we sold them in our store. And not once did I have trouble. They were so good we couldnt keep up with the demand.
I use Alissa's enchilada wrap recipe and spread it thin for crackers.
And I always use frozen corn. I remember Alissa saying it just doesnt taste right with fresh corn. Be sure to get good frozen corn!!
Hope that helps encourage you some. I think they are so easy, and so good I eat them like popcorn during a movie. :)

I liked Rawkinloc's recipe for tortilla chips better than Alissa's.
But the falafel were great! I made a sauce with a cucumber, some spearmint, and a bit of sea salt. Whipped it up in the blender. YUM!

I love the falafal, and I made a tahini, garlic, lemon sauce to go with them, I wrapped them in a large leaf, and added, fresh sliced white onion, chopped super red and ripe tomatoe, thinly sliced red pepper, and some that was it, YUMMMY
as far as the corn chips, I've always made them perfectly, so I have always been mystified by people who say they didn't turn out well, I use lemon juice instead of orange juice, and I use frozen corn, an average ear of corn makes about 3/4 to 1 cup of corn kernals, so I counted each ear as one cup of corn, and I also added, cumin, and chili powder, some salt and some black pepper, and I think some cayenne, I like my food spicy, so I almost always add extra spice, I may have added some fresh chopped cilantro too.

Once again thank you RP ! I made the chips yesterday........ they were great :D ! felt it needed more seasoning though so i'll try your ideas ! They are gone so i'm making more this evening. We have kinda picked at the falafel, will have to try wrapping it romaine with tahini and onion ! sounds good !

Hmm. The one time I made the corn chips, I used fresh corn. It just had a strange aftertaste.
I'll try frozen corn next time. That might clear it up.

I was wondering about the fresh corn verses frozen since all frozen veggies are blanched before being frozen. Technically, they aren't raw since they are thrown in boiling water before being flash frozen. If you do some research on frozen vegatables you will find this out. Frozen fruits are fresh but ALL veggies are blanched. I'm not a stickler, but I know some people only want to eat 100% raw and frozen veggies aren't really raw....
I'm not trying to be a downer...just pointing out a fact.

What Alissa suggested was to get fresh corn and freeze it yourself, that way it isn't blanched, some how the freezing changes the taste and texture, so that it is great.
I often freeze the leftovers of veggies and/or fruits, to use in smoothies, soups, crackers, juices, tortillas, nut pate's etc.
This way, I don't worry if I buy too much to eat, I just dehydrator or freeze it.
helps with the food bills too.

Thanks Rawpriestess for clearing that up. It was like a "DUH" moment. Freezing fresh corn makes perfect sense because it does change the texture. I'm sure everyone else got that. I was thinking about the organic frozen corn from the store and assumed that's what everyone was using.
OK everyone....back to cutting your corn off of the cob and freezing it..... :)

I made these corn chips with frozen raw corn.
They taste sweet. A sickening sweet taste. Not for me. They dont taste at all like I thought they would.
Have you experianced this?

Mine were really sweet too... not what I imagined at all. I wonder if the frozen ones dull the sweetness or something. My husband loved them, but I didn't like the sweetness at all.
Would love the secret - I loved cooked tortilla chips before and would love a substitute!

aha, here is a secret.
add spice, this will dull the sweetness, it really makes these great, I too thought they were very sweet, but with spice you don't even taste the sweetness.

I made Alissa's recipe with frozen corn and it was really good-yes sweet, but good.
My friend turned me onto the Boutenko's recipe and that was AMAZING! Alissa's was as good, it's just that this one had more stuff in it:
shoot-now i can't find it. well, it was like this-
4 cups frozen corn (I thawed it first)
1/2 cup ground flax seed
1/4 cup olive oil
1 bunch cilantro
2 cloves garlic
1 tsp honey
2 chili peppers (I used dried)
and I added 1/4 small onion
These were really, really good-very flavorful.

Fresh corn tortillas ARE sweet.
Processed manufactured salted corn chips aren't.
Some people like the sweet flavor -- some people want something more like the bagged chips they remember.
Whichever, y'all don't have to describe something you don't like as "sickening"!!

I don't know if they have it in Canada ... or Australia, but there's a kind of corn gratin that's sweet tasting, though it's not used as a dessert. And, there's sweet creamed corn in a can. Hmmmm ... there is corn pudding that's based on a Native American (oh, okay, I'll say it: Indian!) dish.
Oh! there's cornbread that is very sweet; in fact, they actually use cake mix in the packaged cornbread mix. Not at all like my grandmother made in a cast iron skillet, but that's another story.
Now see what you've done -- I can't wait for summer to get some of that fresh sweet corn!

We're mid corn season in Australia right now - we're buying it by the case (there are four families that split bulk orders). Looking for fun things to try. I used to make corn bread (sweet and savory). I think I might have to play with that!

Add grains to the corn chips.
I made corn chips years ago and used buckwheat groats that I had sprouted, dried and ground to flour. Wheat berries would work, but Spring (soft) wheat berries would be my first choice if using wheat. You could try oats or a combo as well.
Add ground sundried tomatoes to your basic recipe.
If you add nutritional yeast, dried tomato, and jalapeno (fresh or dried) you will get "Nacho cheese Chips."

Now, don't get me wrong. I absoultely love fresh raw corn. I'ts one of my mostest favorite things because it's so sweet. However, when the corn is dried, it takes on a bitter/sickeninlgy sweetness that my taste buds hate for some reason.
Maybe the dried, concentrated corn is just too much for me.I dunno, but if it's sickening to me, it is what it is and I have every right to express myself that way if I want to (picks up my toys, walks out the door), so there. Na Na Na Na Naaaaaa Naaaaa! Oh, my gosh! Did I really say that??? grin grin toot toot!!! :) Lets keep it light, folks..........:) hee hee hee.
That's the only way I had to describe the flavor of them. Maybe I am not used to the raw corn chip taste, as I grew to love the fried kind, which are not sweet at all. So, in comparison, the raw ones to me are truly sickeningly sweet. In fact I became sick to my stomach after eating one of them. They also had a bitter taste to them
:confused: Maybe I'll never get used to the raw version, who knows, but they are too sweet for me, that's for sure. i feel left out, everybody else loves them :(

I just thought of something else that would be good: Sprouted Flax Seeds (http://store.gorawcafe.com/grff-flxseed.html).
Have you tried them? They are delicious. I bought a bag out of curiosity and I love them. They taste "toasty" -- so much so, I emailed them and had to inquire if they were truly raw. They are crunchy and do not have that weird "industrial" flavor that dark flax seeds sometimes have (if that makes sense).
It may be the flax giving you that bitter taste. some people are more sensitive to flax; others aren't at all. I find golden flax to work best, as it's mild; however, the sprouted flax has no "off" or bitterness at all...very different tasting.
Nice little crunchies for salads. They would be great in recipes if one wanted texture, I would think.
Anyway, my point being, they might be a better choice in the chip recipes; but I haven't tried them that way; If I ever do make chips again, I will.

Yes, in fact, I have just eaten some veggie flax crackers today! They truly are yummie, aren't they?
