View Full Version : Help! Have Raw Potluck in an Hour!

Anyone have any quick and easy raw ideas for a potluck? I just found out about it and I don't have a lot. No dates, for one thing. I have nuts and seeds of most types and some broccoli, celery, tomatoes, butternut squash, peas, corn...yikes. Not a lot. Any ideas, anyone?

How about throwing together a vegetable plate? Just cut veggies into bite-size pieces and arrange attractively on a plate.
You could make a dip to go along with, here's a few ideas:
-fresh tomato salsa
-guacamole
-an herb dip:
Blend in a blender until smooth and creamy:
raw nuts and/or seeds
water
vinegar, or lemon juice
salt, or miso
any herbs/seasonings of your choice

BASIC VINAIGRETTE (Raw Foods for Busy People)
1 c olive oil
1/2 c cider or balsamic vinegar (or mix of the 2)
3 cloves garlic
2 T honey or agave
1 t salt and pepper
2t dried oregano and basil
dried chili peppers optional
Put over tomatoes, mushroom maybe throw in some corn- maybe some pine nuts

Okay, thanks for your help guys! I ended up making a veggie tray and bringing an oil/vinegar etc dressing for it. There was the most amazing food there (some people knew about it ahead apparently...it's hard to make cool last minute raw recipes).
Hi, wondering if your potluck was in the city or up by Woodstock NY ? I got invited to one last week but it got snowed out ! Glad you were able to throw something together !
