I'm so proud of myself!! :D I made some cookies without a recipe! I'll post it here and let you know about how long they take to dehydrate tomorrow.

2 c almonds-chopped finely in the food processor.
add:
1/2 c apricots soaked for 2 hours or more
3 TBSP honey
1 tsp vanilla
orange pulp from 3-4 oranges juiced with the peel on.

mix. form into small balls and flatten on the palm of your hand. Dehydrate at 105 degrees. (I'm thinking 10 hours or so.)

Makes 2 dozen.

Hmm.. those sound good. Must be the day for the cookie creativeity bug to hit, I made some cookies on my own today too. I'll have to try yours, once I figure out how to get orange juice pulp, maybe I can blend an orange and stain it through a nut mylk bag.. that would work.

okay-here are my findings. They are just a teeny bit too bitter. The dough was AWESOME-could barely keep dh from eating it all! But once they were dehydrated they were a slightly too bitter. The dc said they were still yummy, but we all agreed either - add more honey or use less orange pulp. Maybe I should have used dates instead of apricots??? or maybe I need more like a cup of apricots???

They only took about 6 hours to dehydrate.

You wrote you juiced the oranges WITH the peels. That could cause a bitter taste. Try it again, but peel the oranges. It looks like there is plenty of other sweetner with the honey.

These cookies sound yummy.

no-I wanted the peel for the orange zest taste-but I may have used too much. i did give on to my friend who's diet is VERY S.A.D (she even works at Dunkin Donuts and is allowed to eat all the donuts she wants on her shift!!! :eek: ). She said that they were pretty good-just needed a little more sweetner. She tought they might be yummy if I put raw honey between 2 cookies, making a cookie sandwich....I'll have to try it.

Question for everyone on the dehydrated cookies: I have made similar recipes and when I dehydrate them they are so rough to eat. I have tried under dehydrating them too but still have the roughness causing rawness in the rough of my mouth. So I freeze all my cookies and treats. Has anyone else had this problem. note that i cannot eat rough foods like pecans, walnuts either. If I was SAD I could not eat Captin Crunch cereal either..lol. not that I would but I remember as a child that cereal did the same thing to me as the above. Odd isn't it ?

Maybe it is one ingreedent that is bothering you such as oats.

That is a thought...I do not use oats but I do use sprouted Buckwheat. I will try eliminating it and see.

I have the same challenge with the roof of my mouth, but not on raw,

when I used to eat toast or anything that was hard, the top of my mouht would swell up, and hurt terribly for days, then it would go away and come back the next time I ate something hard, like nuts or pop corn, but when I am eating raw, it never happens.

I thought I was the ONLY person this happend to, because I never met anyone else who knew about this, even my dentist years ago, said he had never heard of this, HUH?

goes to show how much he knew!!

AS FAR AS THE COOKIES GO

I LOVE to use

dates with walnuts

apricots with almonds

raisins with cashews

these combinations just work well together.

You can also use dates and pecans, or dates and almonds

As far as the bitterness

the zest of the peel is ONLY the orange part, try cutting just a bit of the orange part of the orange, and using that for your zest, but the white pith of the peel is the super bitter part,

I would disgard that, and use the orange pulp, for the flavor and some juice, use the zest--the orange peel part for flavor and some tang, and toss the white pith.

in Victoria Boutenko's class years and years ago, she showed us how to use tangarine zest as a wonderful taste sensation in her raw cakes, I also like to use raspberries with tangarine zest, that is super delicious too.

your cookie recipe sounds really delicious. mmmmmmmmmm
